Readily available food, ingredients that you can easily find in your house, combine them together, and a meal is ready. Yes that's what an egg salad is. Everyone loves it because, it's simple, healthy, and you can be innovative with it. Here are some recipes you can try.

Olive and Mustard Egg Salad

Ingredients
  • Hard-boiled Fggs, 4 (peeled and chopped)
  • Mayonnaise, 1 cup
  • Pimento Stuffed Green Olives, 6 (chopped)
  • Sweet White Onion, 1 tsp. (finely chopped)
  • Dijon Mustard, 1 tsp.
  • Paprika, ⅛ tsp.
  • Parsley, 1 tbsp. (fresh and chopped)
  • Sweet Pickle Relish, 1 tbsp.
  • Salt and Pepper, as per taste.
Preparation:
  • Take a large mixing bowl and mix mayonnaise, mustard, relish, and paprika in it.
  • Blend it well into a smooth paste.
  • Add all the other ingredients into the bowl and mix well.
  • Add salt and black pepper. Sprinkle parsley as a garnish.
  • Chill it in the refrigerator for at least an hour and serve it cold.

Smoked Salmon and Sun-Dried Tomato Egg Salad

Ingredients:
  • Hard-boiled Eggs, 4 (peeled and chopped)
  • Mayonnaise, ⅓ cup
  • Smoked Salmon, 2 oz. (diced)
  • Shallot, 1 (finely chopped)
  • Celery, 1 (stalk, leaves or end) (chopped)
  • Sun-dried Tomatoes, 1 tbsp. (finely chopped)
  • Sherry Vinegar, 1 tsp.
  • Paprika, ⅛ tsp.
  • Dill, 1 tbsp. (fresh and chopped)
  • Salt and Pepper, as per taste.
Preparation:
  • Take a large mixing bowl, combine mayonnaise, shallot, vinegar, tomatoes, paprika, dill in it. Mix well so that it makes an even dressing for the rest of the ingredients.
  • Add the other ingredients, half the parsley, mix well.
  • Add salt, pepper, garnish it with parsley and sun-dried tomatoes.
  • Chill it in the refrigerator for 2 hours and then serve.

Parmesan and Sausage Egg Salad

Ingredients:
  • Hard-boiled Eggs, 4 (peeled and chopped)
  • Breakfast Bacon Sausages, 5 (cooked and chopped)
  • Light Mayonnaise, ⅓ cup
  • Sweet White Onion, 2 tbsp. (finely chopped)
  • Parmesan Cheese, 1 tbsp. (finely grated)
  • Lemon Juice, 1 tsp.
  • Yellow Mustard, 1 tsp.
  • Salt and Pepper, as per taste.
Preparation:
  • In a bowl, large or medium, add mayonnaise, lemon juice, mustard, and sweet white onion. Mix them well. This needs to blend well as, this mixture is going to be used as a dressing for the salad.
  • Add the eggs and sausages.
  • Add salt and pepper.
  • Chill it in the refrigerator for an hour before serving. This will ensure that the flavors combine well.
