Working moms may find it extremely difficult to prepare elaborate meals everyday. Sometimes they may resort to takeaways, however, the guilt of feeding unhealthy food to the family can be quite overwhelming. Stir fries are perfect options for such tiring nights. A stir fry doesn't take too long to prepare, is nutritious, and forms a meal in itself. So let's take a look at how it's prepared.

Easy Vegetable Stir Fry

Ingredients
  • 1 tbsp. oil
  • 2 cups sliced zucchini
  • 1 cup carrots, sliced
  • 1 cup green beans, sliced
  • 1 onion, chopped
  • 1 tsp. dried basil leaves
  • ½ tsp. salt
  • ⅛ tsp. pepper
  • 3 tomatoes, sliced
  • 1 cup shredded cheese
Method of Preparation
Heat oil in a heavy skillet. Add the sliced zucchini, carrots, beans, and onion into the skillet and stir fry for 3-4 minutes, until the onion is crisp tender. Add the seasonings mentioned and layer the tomato slices over the vegetables.
Sprinkle cheese over all the vegetables. Cook over medium heat for 2-3 minutes, until the cheese melts. Serve as it is or along with steamed rice or noodles.

Pineapple Tofu Stir Fry

Ingredients
  • 1can pineapple chunks
  • 5 teaspoons rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon ketchup
  • 2 teaspoons brown sugar
  • 7 ounces extra-firm, water-packed tofu
  • 1 teaspoon cornstarch
  • 3 teaspoons canola oil
  • 1 tablespoon minced garlic
  • 1 large bell pepper
Method of Preparation
Whisk 3 tablespoons pineapple juice, vinegar, soy sauce, ketchup, and sugar in a small bowl until smooth. Place the tofu in a medium bowl and pour in 2 tablespoons of the sauce. Allow the tofu pieces to marinate in the sauce.
Meanwhile, add cornstarch to the remaining sauce and whisk until smooth. Heat 2 teaspoons of oil in a large non-stick skillet over medium-high heat. Transfer the tofu to the skillet and pour the leftover marinade into the main bowl of sauce.
Cook the tofu, stirring every 1 to 2 minutes, until golden brown. Transfer the tofu to a plate. Add the remaining 1 teaspoon of oil into the skillet and heat over medium heat. Add the minced garlic into the hot oil, and allow it to release its aroma. Next, add bell pepper and cook till it becomes tender.
Pour in the sauce and stir the mixture until the sauce thickens. Then add the tofu and pineapple chunks. Allow them all to cook for another 2 minutes, and then serve hot.

Chicken Stir Fry

Ingredients
  • 1 pound boneless, skinless chicken breasts
  • ¼ teaspoon of salt
  • Black or white pepper to taste
  • ⅓ cup all-purpose flour
  • 3 teaspoons extra-virgin olive oil
  • 4 cups sugar snap peas, trimmed
  • 1 can reduced-sodium chicken broth
  • 3 cloves garlic, minced
  • ¼ cup finely chopped fresh parsley
  • 1 tablespoon freshly-grated lemon zest
  • 1 tablespoon lemon juice
Method of Preparation
Cut chicken into 1-by-2-inch strips and season with salt and pepper. Add flour to a shallow pan and dredge the chicken strips in it, shaking off the excess. Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat. Add peas and stir fry for 2-3 minutes.
Transfer the peas to a large bowl and add the remaining 2 teaspoons of oil to the pan. Add the chicken and cook for 4 to 5 minutes, stirring, until it turns light brown.
Transfer the chicken to the bowl with the peas. Next add the broth and minced garlic to the pan; cook for 6 to 8 minutes until the broth has been reduced to 1 cup. Reduce the heat to medium ,and transfer the chicken and peas to the pan. Cook for another few minutes. Add parsley, lemon zest, and lemon juice. Your stir fry is ready to be devoured!
