Easy Recipes for Ground Beef

After a hectic evening of work and driving kids around, you have to come home and make a meal for the family. You reach home and realize that all you have in your fridge is ground beef and a few other things, and you don't know what to cook. For such situations, here are a few easy recipes you can use.
It's always great fun learning to prepare new dishes. Ground beef is a versatile ingredient and can be used in many dishes. It's simple, easy to learn, and won't take much of your time in the kitchen. Don't believe me? Just take a look at the following recipes.

Hominy Bake

This is an delicious, easy-to-make casserole.

Ingredients:
  • Ground beef, 1 pound (lean)
  • Onions, ½ cup (chopped)
  • Chili with beans, 1 can
  • Chili powder, 2 teaspoons
  • Condensed cream of chicken soup, 1 can
  • Yellow hominy, 1 can (20 ounces or enough for 2½ cups, drained)
  • Olives, 2 tablespoons (sliced, ripe)
  • Processed cheese, ½ cup (shredded)

  • Add some oil to a pan and heat it. To this, add the onions and ground beef. Cook till the beef is brown.
  • Add the rest of the ingredients except cheese and stir well.
  • Take a 2-quart casserole dish, and to this, add the beef and hominy mixture.
  • Cover the dish and bake at 350ºF for 25 minutes.
  • Remove the dish, sprinkle cheese on top, and bake uncovered for 5 to 10 minutes.

Beef and Noodle Casserole

Ingredients:
  • Olive oil, 2 tablespoons
  • Ground beef, 1 pound (lean)
  • Onions, ½ cup (chopped)
  • Parsley, 1 tablespoon (minced)
  • Tomatoes, 2 cans (14 ounces each)
  • Tomato sauce, 1 can (8 ounces)
  • Salt, 1 teaspoon
  • Pepper, 1 teaspoon
  • Garlic powder, ½ teaspoon
  • Worcestershire sauce, 1 teaspoon
  • Noodles, 8 ounces
  • Cheddar cheese, 12 ounces (shredded)
  • Parmesan cheese, 3 tablespoons (grated)

Directions:

  • Add olive oil to a medium-sized dish, and let it heat. Next, add the minced beef and let it brown.
  • Remove the beef and the fat, till only about 2 tablespoons of fat is left behind. To this fat, add onions and sauté till they are golden brown.
  • Now add parsley, tomatoes, tomato sauce, seasoning, and cooked beef. Cover and let it simmer for an hour.
  • Take the noodles and boil them in salted water as per packet instructions. Drain and rinse the noodles with hot water.
  • Take a casserole dish and grease it. Layer the dish with noodles, cheese, beef mixture, and the sauce. Just make sure the top layer is cheese.
  • Bake at 350ºF till the cheese melts and starts bubbling.

Baked Ziti with Ground Beef

Ingredients
  • Ground beef, 1 pound (lean)
  • Onion, ½ cup (chopped)
  • Green bell pepper, ½ cup (chopped)
  • Tomatoes, 1 can (15 ounces, diced and not drained)
  • Tomato sauce, 1 can (8 ounces)
  • Basil leaf, ½ teaspoon (dried, crushed)
  • Oregano, ½ teaspoon (dried, crushed)
  • Garlic powder, ½ teaspoon
  • Salt to taste
  • Pepper, a pinch
  • Ziti or elbow macaroni, 1 packet (8 ounces, cooked and drained)
  • Mozzarella cheese, 2 cups (8 ounces each, shredded)

Directions:

  • In a large skillet, add some oil and sauté the beef, onion, and green bell pepper. Cook well till the onion is soft, and the beef is golden brown.
  • Remove most of the fat, leaving just a little. To this, add tomatoes, tomato sauce, basil, oregano, garlic powder, salt, and pepper. Stir this mixture well.
  • Next add the ziti/elbow macaroni and cheese.
  • Transfer all this to a casserole dish. Cover the mixture with cheese and bake at 350ºF for 30 minutes allowing the cheese to melt and bubble.

Rice and Beef Hash

Ingredients
  • Ground beef, 1 pound (lean)
  • Onion, ½ cup (chopped)
  • Green pepper, ½ cup (diced)
  • Tomatoes, 1 can (15 ounces, diced)
  • Rice, 2 cups (cooked)
  • Chili sauce, 1 tablespoon
  • Salt to taste
  • Pepper, one pinch
  • Cheddar cheese, ½ cup (shredded)

Directions:

  • Take a large skillet and put it on medium heat. To this, add some olive oil, beef, onion, and green pepper. Cook till the onions are soft and the beef is brown.
  • Remove the extra fat, leaving just a little for cooking the tomatoes, rice, chili sauce, and pepper.
  • Lower the heat, cover the skillet, and let the beef simmer for 10 minutes.
  • Sprinkle cheese on top, and let it cook well till the cheese has melted.
