Chicken Munch

Ingredients
  • 4-8 skinless boneless chicken tenders
  • 1 cup of cereal, ground
  • 1 egg white, beaten
  • Non stick cooking spray
  • Sauce for dipping
Method of Preparation
Preheat the oven to 375 degrees. Crush the cereal in a blender and add garlic powder, salt, pepper and Italian seasoning.
Dip the chicken tenders in egg white. Roll them in the crushed cereal mixture. Spray cookie sheet and tenders with cooking spray. Now bake the chicken tenders in the oven for 20-30 minutes. After 15 minutes, turn over the tenders to make them crispy brown on both sides. Use mustard, ketchup for dipping.

Fried Vegan Delight

Ingredients
  • 0.25 cup, chopped Red Ripe Tomatoes
  • 0.75 cup Bean sprouts
  • 0.25 cup chopped Onions, raw
  • 1.75 cup Mushrooms, fresh
  • 1 medium carrot, chopped
  • 2 stalks celery, chopped
  • 1 tsp orange zest
  • Juice of 1 orange
  • 1 tbsp Canola Oil
  • 1 tbsp Olive Oil
  • 1 tbsp Sesame Oil
  • 1 cup - cooked White Rice, medium grain
Method of Preparation
Cook the rice, then set aside. Add the oil in a large frying pan. Heat the oil to sauté temperature. Add carrots and celery and sauté till slightly softened, then add the onions. Cook onions till translucent.
Add the tomato, sprouts, mushrooms and garlic. Add the orange zest, and the orange juice and sauté till everything is done. Serve over the white rice. Number of Servings: 4

Rice and Chicken Recipe

Ingredients
  • 1 tablespoon oil
  • 4 small boneless skinless chicken breasts
  • 1 can cream of chicken soup
  • 2 cups dry instant rice
  • 1-2/3 cup water
  • 1/4 tsp ground pepper
  • 1/4 tsp paprika
  • 2 cups broccoli chopped
Method of Preparation
Heat oil in a skillet and add chicken and cover. Cook for 4 minutes until the chicken is cooked.
Remove chicken and keep aside. Add water, soup, paprika, pepper and bring to a boil. Stir in rice and broccoli. Add chicken on the top. Cover and cook on low for 5 min. Cut each breast in half. One chicken half plus a half cup of the rice/broccoli mixture counts as one serving for this.. This meal can be eaten along with green salad.

Chili Rice Casserole

Ingredients
  • 1 whole wheat tortilla
  • 1/2 Cup Vegetarian Re-fried Beans
  • 1/4 Cup Chopped Onion
  • 1 tbsp Chopped Green Pepper
  • 1 tbsp. Salsa
  • 1/5 Sliced Fresh Avocado
  • 1 tbsp Sour Cream
Method of Preparation
Mix the onion with the re-fried beans. Heat in the microwave until hot (about one minute), and then stir.
Scoop the beans onto the tortilla. Fold the two sides in. Then roll from bottom to top. Top the burritos with the salsa, and the avocado slices. Top it with green pepper and additional onion. Serve with sour cream.
