  • Lemon Juice, 2 tsp.
  • Lemon Rind, 1 lemon (grated)
  • Mayonnaise, 4 tbsp.

You can substitute mayonnaise with crème fraiche. For those who are not aware of this term, it means fresh cream in French and is a type of sour cream (soured by using a bacterial culture) which has a 28% butter fat content and has a pH of 4.5. It is, however, thicker and less sour than standard sour cream.

Apricot Sauce

  • Apricot Preserves, 1½ cups
  • Lemon Juice, 2 tsp.
  • Nutmeg, ¼ tsp. (ground)
  • Cinnamon, ¼ tsp. (ground)
  • Water, ½ cup
Method of Preparation
  • Mix the apricot preserves with water in a pan and bring to boil.
  • Simmer for about 5-7 minutes and keep stirring the mixture constantly.
  • Take the pan off the flame and add the rest of the ingredients (lemon juice, nutmeg, and cinnamon) to the apricot mixture.
  • You can either allow it to cool down to room temperature or serve it hot. Do not refrigerate, as it will not allow the flavors to infuse well.
