3 Easy Coca-Cola Cake Recipes

• Unsalted butter, room temp., 1½ sticks
• Granulated sugar, 2 cups
• All-purpose flour, 2 cups
• Coca-Cola, 1 cup
• Whole milk, ¼ cup
• Natural cocoa powder, 3 tbsp.
• Unsalted butter, room temp., 1 tbsp.
• Salt, ½ tsp.
• Large eggs, 2

• Confectioners' sugar, 3 cups
• Mini marshmallows, 1½ cups
• Unsalted butter, room temp., 1 cup
• Natural cocoa powder, ½ cup
• Whole milk, ¼ cup
• Vanilla extract, 2 tsp.
• Salt, ½ tsp.

Preheat the oven at 350°F and place a 9" x 13" cake pan over a parchment paper. Using a pencil, trace a circle around the pan and cut it out; repeat to get another piece of circle. Take 1 tbsp. butter to grease two 9" x 13" cake pans, and place the parchment circles inside each of them.

Press the circles lightly so that the butter will coat them a bit. Now, turn the circles over so that the coated side faces upward. Next, take a standing mixer or a hand blender to beat 1½ sticks of butter over medium speed.

Add 2 cups of granulated sugar, and beat the mixture until it becomes light and airy; this should take about 5 minutes or so. Meanwhile, whisk all-purpose flour, cocoa powder, and salt together in a bowl. Also, combine Coca-cola and whole milk together in another bowl.

Once the butter-sugar mixture is ready, reduce the speed to low and add eggs, one at a time. After the eggs have incorporated properly, add the dry and wet ingredients alternately. Turn the mixer off once you get a smooth batter.

Divide the batter in the two pans we prepared earlier. Place both pans inside the oven and bake them for about 25―30 minutes. After 25 minutes, do a toothpick test to see how much longer you'll have to keep the cake inside the oven. When the toothpick comes out clean, remove the cakes from the oven and set them aside to cool down completely.

While the cakes cool down, prepare the frosting. Take a small bowl to combine confectioners' sugar, salt, and cocoa powder together. In a separate bowl, beat 1 cup butter with a hand blender.

Add the dry ingredients from the bowl with the butter, and combine it on low speed. Next, gradually add vanilla extract and milk, and mix again for 3 minutes. Once the frosting is ready, turn the blender off and keep the bowl aside.

Now it's time to remove the cakes out of the pans. Peel the parchment paper off, and place one of the cakes onto a cake stand. Use a spatula to spread some icing on top of it, and spread a layer of marshmallows on top as well. Place the second layer of cake over it, and spread the rest of the icing on top and the sides before serving it.

• Buttermilk, ½ cup

• Powdered sugar, 4 cups
• Whole milk, 6 tbsp.
• Dark cocoa powder, 3 tbsp.

Follow the instructions mentioned in the above recipe―preheat the oven and ready a pan with parchment paper. In a large bowl, combine powdered sugar and all-purpose flour together. Now take a saucepan to combine oil, butter, cocoa powder, and Coca-Cola together; bring the ingredients to a boil over medium-low heat.

Pour this mixture into the sugar-flour bowl and whisk as gently as you can. Once the dry and wet ingredients have incorporated properly, add eggs, buttermilk, baking soda, and vanilla extract. Use a hand blender or a whisk to combine everything together; this should give you a smooth batter.

Once the batter is ready, you can either bake the cake in a single pan or two separate pans (as mentioned in the above recipe). Place the pan inside the oven and bake for about 25―30 minutes. After 25 minutes, do a toothpick test to see how much longer you'll have to keep the cake inside the oven.

To prepare the dark chocolate frosting, combine butter, dark cocoa powder, and milk in a saucepan, and heat it over medium-low heat. Just before the mixture begins to boil, remove the pan off the stove. Whisk the powdered sugar and vanilla extract, and mix properly; you should have a glossy, slightly thick frosting ready.

Remove the cake out of the pan, and evenly spread the frosting over it with a spatula. You can put the cake into the refrigerator before serving, or serve it at room temperature.

Once the cake has cooled down properly, drizzle the glaze on top of the cake; don't use a spatula to spread the glaze. Serve the cake once the glaze has had time to set.
