Most people have the wrong impression that cooking beef is tough and restrict eating it to restaurants. Some dishes may be a bit elaborate, but then why not opt for the simpler ones which you can cook and enjoy at home?

Mongolian Beef Recipe

Ingredients
  • 2 kg flank steak, sliced across the grain
  • 12 tbsp cornstarch
  • 2 tsp grated ginger
  • 4 cloves garlic, minced
  • 1 cup low-sodium soy sauce
  • 2 cup water
  • 1/2 cup brown sugar
  • 1 tsp. (heaping) red pepper flakes
  • 6 large scallions, sliced
  • 500g blanched and chopped green beans
Direction
This recipe shows that beef and oriental preparations can go together. First preheat the oven to 180 degrees C. Then mix steak and cornstarch. Make sure that the pieces are fully coated, but there should be no excess of cornstarch on any part of the steak. Mix the soy sauce, red pepper flakes, water and brown sugar together.
Keep this mixture in an oven proof casserole dish and place it in the oven for about 1 hour. Add the beans and scallions over the steak once it is done. And your Mongolian beef is ready! You can eat it along with steamed rice.

Coney Island Tatters

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 cup prepared barbecue sauce
  • 2 large all-purpose potatoes
  • 1/2 cup shredded Cheddar cheese (optional)
  • 1/4 cup sliced green onions (optional)
Direction
Keep unfrozen meat/ground beef in a large skillet, and place it over a medium heat till it loses its pink color. This might take about 8-10 minutes. In the meantime, pierce the potatoes with a fork and keep them in the oven for 10 minutes till they become soft.
Back to the beef, it must have started crumbling by now. Pour out the drippings and stir the barbecue sauce into the beef. Then place a cover on the skillet and cook it over low heat for 10 minutes. Go back to the potatoes.
They must be ready by now. Cut and arrange them on a plate and add the mixture of beef once it gets ready. If you want, you can also top it with delicious cheddar cheese and green onions.
You can even use frozen crumbled meat mixture, but you will have to ensure that you heat the frozen mixture a bit more!

Pan Roasted Beef Tenderloin with Ginger and Shiitake Mushrooms

Ingredients
  • 4 (8 ounce) beef tenderloin filets
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced fresh garlic
  • 1/2 cup thinly sliced fresh shiitake mushrooms
  • 3 tablespoons sake
  • 2 tablespoons mirin
  • 1 tablespoon finely chopped garlic chives
  • 1 cup unsalted butter
  • 2 tablespoons olive oil
  • salt and ground black pepper, to taste

Out of all the beef recipes discussed here, this one is a little hard, but don't let that deter you! Let's start right away. Preheat the oven to 400 degrees. In the mean time, heat the olive oil on high heat in a large oven proof skillet. Season the fillets with salt and pepper and place them in olive oil. Pan-fry them till they turn golden brown. This will take about 3 minutes.
Then transfer the beef into the preheated oven and cook to desired doneness. While you are heating the beef in the oven, heat 1/4th cup butter in a pan. Add the ginger and garlic, and cook for about 1.5 minutes. Add shiitake mushrooms and cook for 3 to 4 minutes more till they soften.
Then add the sake and mirin and simmer until the mixture reduces to half. Melt the remaining 3/4 cup butter, then reduce heat and cook until the butter browns. Once browned, season with salt and pepper, and stir in the chives. Spoon this sauce over the steak!
