Coconut Almond Muffins

Serves: 12
Prep time: 15 minutes
Cook time: 30 minutes

Ingredients:

* 2 tablespoons coconut oil
* ¾ cup almonds (skinned)
* ½ cup almond flour
* ½ cup coconut flour
* 2 teaspoons ground cinnamon
* ¼ teaspoon salt
* 1 teaspoon baking soda
* ½ teaspoon ground ginger
* ½ teaspoon of allspice
* 5 large eggs
* 2 teaspoons vanilla
* ¼ extra-virgin olive oil or canola oil
* ½ teaspoon orange zest
* ½ cup shredded, unsweetened coconut

Steps:

1. Preheat your oven to 350 degrees. While the oven is preheating, prepare a muffin tin with 12 cupcake liners.

2. Heat the coconut oil in a skillet over medium heat. Then add the almonds to the oil and toast until golden brown, then set aside.
3. Combine all dry ingredients (almond flour, coconut flour, cinnamon, baking soda, ginger, allspice, salt) into one bowl and mix together with a fork, set aside.

4. Combine all wet ingredients (eggs, vanilla, oil, orange zest) into another bowl and mix well. Add unsweetened coconut and then slowly add the dry ingredients until combined.
5. Slowly pour the mixture into the baking cups until they are 2/3 of the way full.

6. Place the muffin tin into the oven and bake for 25 to 30 minutes. Do a toothpick test in the middle of a muffin. If it comes out clean, they are ready.

7. Allow them to cool for about 10 minutes and then transfer them to a cooling rack to cool the rest of the way.
