Snowflakes Brownies

Makes - 20 pieces

Ingredients
  • Eggs, 6
  • Dark chocolate, 13 oz.
  • White chocolate chips, 9 oz.
  • Sugar, 12 oz.
  • Unsalted butter, 13 oz.
  • All-purpose flour, 1½ cups + 2 tablespoons
  • Powdered sugar, for dusting, 2 tablespoons
  • Vanilla extract, 1 tablespoon
  • Salt, 1 teaspoon
Preparation
Preheat the oven at 350ºF. In a double boiler, melt (not boil or burn) butter with dark chocolate. In a different bowl, beat the eggs with sugar till it dissolves properly. As you're whisking, add salt and flour in it as well. Finally, add the white chocolate chips in and incorporate it properly.
Now take a greased baking pan, 13" x 9", and pour it in. Spread the batter evenly on the pan so you get an even thickness for the brownies. Place the baking pan in the oven for about 25 minutes.
To know if the brownies are ready, you will see that the top lay is turning crisp and dry. Also, do a quick toothpick test to be absolutely sure. Once they are ready, bring the pan out of the oven and let it cool down for at least 15 minutes. Cut them into square pieces and sprinkle powdered sugar on top. Serve them while they're warm with cold milk.

Dark Chocolate - Peanut Butter Brownies

Makes - 32 pieces

Ingredients
  • Light brown sugar, 10 oz.
  • Cake flour, 5.25 oz.
  • Corn syrup, 4 oz.
  • Unsalted butter, 3 oz.
  • Dark chocolate chips, 3 oz.
  • Chunky peanut butter, 3 oz.
  • Dark chocolate bar, chopped, 2 oz.
  • Dutch-processed cocoa powder, 1 oz.
  • Salt, 1 teaspoon
  • Vanilla, ½ teaspoon
  • Eggs, 3
Preparation
Preheat the oven at 350ºF. Take a ¼" sheet pan and grease it with some butter. In a double boiler, melt 1 oz. unsalted butter, peanut butter, and chopped dark chocolate properly. Once you get a smooth batter, remove from the heat and keep it aside.
Once it's slightly cooler, add sugar, 2 oz. unsalted butter, and corn syrup, and combine thoroughly. In a different bowl, beat eggs and add the vanilla. Combine both mixtures and whisk properly. Next, add sifted cake flour, salt, and cocoa powder in and fold the batter as gently as you can.
Finally, add the dark chocolate chips and mix it one more time. Take the baking sheet and spread the batter on it. Bake the brownies for at least 35―40 minutes. Using a toothpick, check if they are ready. Remove the sheet out of the pan and let it cool down for some time. After about 5―10 minutes, cut them into small pieces and serve with cold milk.

Caramel (Dulce de leche) Brownies

Makes - 20 pieces

Ingredients
  • Dark chocolate, 4 oz.
  • Sugar, 1⅓ cups
  • All-purpose flour, 1 cup
  • Dulce de leche, ½ cup
  • Flour, ½ cup
  • Pecan halves, chopped, ½ cup
  • Fudge sauce, ⅓ cup
  • Brown sugar, ¼ cup
  • Brown sugar, 3 tablespoons
  • Unsalted butter, 2 tablespoons
  • Vanilla, 2 teaspoons
  • Salt, ½ teaspoon
  • Cinnamon, ½ teaspoon
  • Eggs, 3
Preparation
Preheat the oven at 350ºF and grease a baking pan, and keep it aside. In a double boiler, melt butter and dark chocolate till you get a smooth mixture. Remove the mixture off the stove and let it cool down just a bit. In a different bowl, whisk ¼ cup dulce de leche, eggs, and vanilla together; add this to the chocolate mixture.
Add sifted flour and salt in, and fold the batter thoroughly. Pour the batter in the baking pan. But before you place the pan in the oven, we need to make the crumb mixture that goes on top of the brownies.
In a small bowl, add ⅓ cup dulce de leche, brown sugar, chopped pecans, ½ cup flour, cinnamon, and salt, and combine it properly. Spread a layer (depending on how thick or thin you like) of the mixture over the brownie batter.
Bake them for about 40 minutes and keep a regular check with a toothpick to see if they are ready. Remove the pan from the oven and let it cool down before you cut them into pieces.
