How to Make Cucumber Sandwiches

Cucumber sandwiches are for the snack world, what chicken soup is for the sick soul. It's a snack that is truly like no other. And if you've noticed, it is a classic choice for all occasions. Cucumber sandwiches seem to fit perfectly in all the situations that they are placed in―may it be as an accompaniment to a picnic out in the countryside, or as a late afternoon snack right after your baseball or swimming practice.
These sandwiches are very filling and can be had as a plain snack without any frills, or can be crafted into a delicious meal with those extra frills. In the following sections, we will give you some basic and easy sandwich recipes.

With Mint Leaves

Ingredients
  • Cucumber, 3 inches long
  • Butter, 2 tbsp., unsalted
  • Mint leaves, ¼ cup
  • Bread slices, 6
  • Cream cheese, 2 tbsp.
Preparation
  • Now, slice the cucumber into the desired thickness.
  • Mix the mint, butter, and cheese into a paste by placing them all into a bowl.
  • Take the mint leaves and wash them under water, then strain the excess water off.
  • Next, dice the leaves.
  • Spread the paste on a slice.
  • Place the diced cucumber pieces onto the slice and cut into desired shape and size.

With Garlic

Ingredients
  • Pepper to taste
  • Lemon juice, 1 tbsp.
  • Bread slices, 20
  • Cucumber, 1 large, sliced and peeled thinly
  • Butter, ¾ cup
  • Garlic, 2 tbsp., fresh
  • Olive oil, 1 tbsp.
  • Salt
Preparation
  • Put the olive oil, pepper, and lemon juice in a bowl and stir well.
  • Take the garlic through a blender so that it becomes a paste.
  • Salt the cucumber slices and place them in a strainer for the excess water to drain off.
  • Mix the butter and garlic and apply to one side of the slice.
  • Next, add the salted cucumber slices to the mixture and coat well.
  • Serve immediately.
  • Now, place the cucumber on top of the bread slices and cover with the other slices.
  • Remove the crusts and quarter it if you wish.
  • This makes about 35-40 sandwiches.

With Dressing

Ingredients
  • Italian salad dressing mix, 7 ounces
  • Cucumber, 1 large, sliced and peeled thinly
  • Cocktail rye bread, 1 pack
  • Whipped cream cheese, 8 ounces
Preparation
  • Spread on either side of the rye bread slices.
  • Mix the cream cheese and salad dressing in a small bowl.
  • Now, place the cucumber pieces on top of this mixture.

With Eggs

Ingredients
  • Pepper, ⅛ tsp.
  • Lettuce leaves, 4
  • Mayonnaise, ¼ cup
  • Whole wheat bread slices, 8
  • Cucumber, 1 small, sliced and peeled thinly
  • Eggs, 3, hard cooked and chopped
  • Green pepper, ¼ cup, chopped
  • Red onion, 2 tbsp., chopped
  • Lemon juice, ½ tsp.
  • Salt, ⅛ tsp.
Preparation
  • Spread on the bread slices.
  • Mix the green pepper, eggs, onion, lemon juice, mayonnaise, salt, and pepper in a bowl.
  • Place the cucumber and lettuce on the slices and cover with the remaining slices.

With Parsley and Celery

Ingredients
  • Pepper, ⅛ tsp.
  • Onion, 1 tbsp., grated
  • Celery, ½ cup
  • Cream cheese, 3 oz.
  • Cucumber, 1 ½ cup, finely chopped
  • Bread slices, 32
  • Mayonnaise, ¼ cup
  • Parsley, 1 tsp., chopped
  • Salt, ¼ tsp.
Preparation
  • Lightly butter the bread slices.
  • Next, chop into pulp and drain well.
  • Peel the cucumber after it has been de-seeded.
  • Mix the mayo, cheese, celery, onion, parsley, pepper, and salt in a bowl.
  • Place 2 tbsp. cucumber pulp onto the slices and cover with the remaining slices.
  • This makes 64 sandwiches (in triangles)
  • Cut into desired rectangular or triangular shape. You can cut the crust off if you prefer.
