Apple Cinnamon Muffin Recipes

Muffins are relished by all and make a great picnic snack. Here are some recipes on how to make delicious apple muffins with a mild flavor of cinnamon.
Though the origin of the word muffin is unknown, it is possibly derived from a German word muffe, which means a small cake. It is also said to be related to a French word moufflet which means soft when used in the context of bread.
There are two types of muffins―English and American. The English muffins are made using yeast―a natural leavener, while the American muffins are made using a chemical leavener, such as baking powder or soda.
Following are some muffin recipes that combine the spicy flavor of cinnamon with the sweet taste of apples.

Cranberry Apple Muffins

Ingredients:
  • All-purpose flour, 1 cup
  • Chopped cranberries, ¾ cup
  • Apple (peeled and chopped), ¾ cup
  • Quick cooking oats, ½ cup
  • Raisins, ¼ cup
  • Egg, 1
  • Melted butter, ¼ cup
  • Granulated sugar, ¾ cup
  • Ground cinnamon, 1 tsp.
  • Baking powder, 1 tsp.
  • Salt, ¼ tsp.
  • Vanilla extract, 1 tsp.
Method
In a large mixing bowl, combine the flour, oats, baking powder, and cinnamon. In another bowl, blend the butter, egg, sugar, salt, and vanilla. Stir in the cranberries, apple, and raisins into the batter. Pour it into the muffin pan, filling ⅔ of each cup. Bake the muffins in a 400 °F preheated oven, until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool on a wire rack before serving.

Spicy Apple Muffins

Ingredients:
  • All-purpose flour, 2 cups
  • Eggs, 2
  • Small tart apples (peeled, cored, and chopped), 3 cups
  • Ground cinnamon, ½ tsp.
  • Ground nutmeg, ¼ tsp.
  • Ground ginger, ¼ tsp.
  • Ground allspice, ¼ tsp.
  • Sugar, ¼ cup
  • Salt, ¼ tsp.
  • Baking soda, 1 tsp.
  • Frozen apple juice concentrate, thawed, 1 cup
  • Buttermilk, ¾ cup
  • Wheat germ, 2 tbsp.
  • Walnuts, ½ cup

Method

In a bowl, mix the flour, sugar, baking soda, cinnamon, ginger, nutmeg, allspice, and salt together. In another bowl, whisk the eggs along with the apple juice concentrate and buttermilk. Stir in the flour mixture and wheat germ into the egg mixture until the ingredients blend properly. Add about ⅔ of the chopped apples and chopped walnuts to the batter.
Spoon the batter into some greased muffin cups, filling about ⅔ of each cup. Top the muffins with the remaining apple pieces and sprinkle the cinnamon and sugar over them. Bake the muffins at 375 °F, until the tops spring back when pressed lightly with a fingertip. Let them cool for about 5 minutes on a rack before serving.

Cinnamon Apple Muffins

Ingredients:
  • All-purpose flour, 2 cups
  • Apple (peeled, cored, and chopped), 1 cup
  • Egg, 1
  • Milk, 1 cup
  • Baking powder, 2 tsp.
  • White sugar, ¼ cup
  • Ground cinnamon, ½ tsp.
  • Salt, ½ tsp.
  • Melted butter, ¼ cup
Method
In a bowl, sift the flour, sugar, cinnamon, salt, and baking powder together. In another bowl, whisk the egg with the milk and butter. Stir in the egg mixture into the flour mix until you get a smooth batter. Fold in the chopped apples into the batter and spoon it into some greased or paper-lined muffin cups. Bake the muffins in a 400 °F preheated oven, until a toothpick inserted into center of a muffin comes out clean.
