Here are some quick and healthy cornmeal pancake recipes which you could try out at home. So experiment and enjoy their rich and delectable taste.

Classic Cornmeal Pancake

Ingredients
  • All-purpose flour, 1 cup
  • Large eggs, 2
  • Sugar, 1 tbsp.
  • Milk, 2 cups
  • Cornmeal, 1 cup
  • Baking powder, 2 tbsp.
  • Vegetable oil
Procedure
Take all-purpose flour in a large bowl to which add egg bulk, sugar, milk, cornmeal, and baking powder. Mix all the ingredients with either a blender or stir vigorously to obtain a smooth batter. Heat a cooking pan on low gas flame and add some oil to it.
Pour some batter (about ¼ cup), spread evenly and cook until the pancake turns golden brown or slightly brown. Do not forget to cook from both the sides. Serve it with honey, butter or cream.

Cornmeal Pancakes Buttermilk

Ingredients
  • Stoneground yellow cornmeal, 2 cups
  • Rice flour, ½ cup
  • Sugar, 2 tbsp.
  • Baking powder, 2 tbsp.
  • Baking soda, ½ tsp.
  • Salt, ½ tsp.
  • Buttermilk, 1½ cup
  • Water, ½ cup
  • Vegetable oil
  • Large egg, 1
Procedure
Initially, add the grounded cornmeal, rice flour, sugar, baking powder, and baking soda in a bowl and mix well. Next, in another bowl, add salt, buttermilk, egg, and oil and blend it until the mixture is even. Now, combine the 2 mixtures and mix them thoroughly so that you get smooth consistency batter.
Now, place a cooking pan of low flame. Put ¼ cup of batter onto it and spread evenly. Add 1 tablespoon oil from the sides and cook it for about 5 minutes on both the sides. When the pancake appears golden brown, take it out and serve with fresh cream or butter.

Gluten-Free Pancakes

Ingredients
  • Cornmeal, 2 cups
  • Salt, 1 tsp.
  • Baking powder, 2 tsp.
  • Vanilla sugar, 2 tsp.
  • Vegetable oil
  • Milk, 1 cup
  • Buttermilk, 2 tbsp.
  • Large egg, 1
Procedure
Take a bowl and add cornmeal, salt, baking powder, and vanilla sugar and mix well. Next, add milk, buttermilk, and egg and beat the mixture until a smooth batter is formed. On a cooking pan, add few drops of oil and spread ¼ cup batter evenly. Cook from both sides until it is golden brown.

Southern Cornmeal Pancake

Ingredients
  • Egg, 1
  • Cornmeal, 2 cups
  • Sugar, 2 tbsp.
  • Salt, 1 tsp.
  • Milk, 2 cups
  • Vegetable oil
  • Buttermilk, 3 tbsp.
  • Fresh blueberries, 2 cups
  • Orange juice, ½ cup
  • Water, ¾ cup
Procedure
Initially, we will prepare the orange blueberry sauce. For this, take orange juice, one cup blueberries in a saucepan, add water and bring the mixture to boil for about 10 minutes. Heat until a thicker consistency sauce is formed.
Next, for preparing the cornmeal cakes, combine rest of the ingredients in a large bowl, mix thoroughly and cook them on a heating pan, by addition of ¼ cup batter each time. Remove the pancakes when they become brown in color.
