Cornflake Cookie Recipes

Cornflake cookies are healthy and delicious at the same time. Here are a few cornflake cookie recipes that require a few household ingredients and can be made in a jiffy.
Cornflakes are rich in fiber and carbohydrates. Sprinkled with dry nuts and fresh fruits, and soaked in warm milk, they make a nourishing breakfast. Apart from having them for breakfast, you could also make cookies and cake with the cornflakes.
Cornflake cookies can be served as an item for brunch or an evening snack. These cookies are relished and savored by children and adults alike.

Cornflake Cookies


Ingredients
  • 1 cup powdered sugar
  • 1 cup butter
  • 1 tsp. vanilla essence
  • 1½ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 2 cups cornflakes
  • ½ cup dry nuts (optional)
Preparation
Sieve the flour and baking soda a couple of times. In a wide-mouthed bowl, add the butter and sugar, and blend well using a wooden spoon or a blender. Now, add in the flour and mix well till the mixture turns into a smooth cream. To this mixture, add the cornflakes and dry nuts.
Butter a cookie tray. Using a teaspoon, drop the batter 2 to 2.5 inches apart on the tray. Bake in a 350 °F preheated oven for 15 minutes. Once they cool down, store them in an airtight container. You can use any kind of nuts such as cashews, almonds, pistachios, and hazel nuts for this recipe.

Oats Cornflake Cookies


Ingredients
  • 1 cup powdered brown sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 1 cup butter
  • 2 cups flour
  • 2 tsp. soda powder
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 2 cups cornflakes
  • 2 cups oats
  • 2 cups flour
Preparation
Whisk the eggs and vanilla extract together in a bowl. Blend the butter and sugar in a separate bowl. Sieve the flour, baking powder, soda, and salt a couple of times. Slowly add this dry mixture to the butter and sugar mixture. Loosen the dough by adding the whisked eggs mixture.
Add in the cornflakes and oatmeal. Make lemon-sized balls out of the dough, and flatten them a bit. Arrange them on a cookie tray, and bake at 350 °F for 15-20 minutes. Cool the cookies on a wire rack before storing them in an airtight container.

Chocolate Chip Cornflake Cookies


Ingredients
  • 2 eggs
  • 1 cup brown sugar (powdered)
  • 1 cup white sugar
  • ½ cup cooking oil
  • ½ cup margarine
  • 1 tsp. vanilla extract
  • 2 cups cornflakes
  • 1 cup oats
  • 1 cup chocolate chips
  • ½ cup dry nuts
  • 2 cups flour
  • ½ tsp. salt
  • 1 tsp. baking powder
Preparation
Whisk the eggs and salt together, and set aside. Sieve the flour and baking powder a couple of times. Blend both the sugars, oil, and margarine together until the mixture turns smooth. To this, add the flour, chocolate chips, nuts, cornflakes, oats, and the eggs to form a smooth mixture.
Grease a cookie tray and drop a teaspoonful of the mixture onto it. In a preheated oven, bake the cookies for 15-20 minutes at 375 °F. Allow the cookies to cool on a wire rack before transferring them to an airtight container.
