Ingredients
  • Cornbread, 5 cups (crumbled)
  • Brown Bread, 4 cups (crumbled)
  • Chicken Broth, 4 cups
  • Diced Chicken, 2½ cups
  • Butter, ⅓ lbs.
  • Eggs, 2 (large, beaten)
  • Green Onion, 1 cup (chopped)
  • Celery, ½ cup (fresh, chopped)
  • Herbs, ½ cup (dry, mix of sage and thyme, rosemary, and allspice)
  • Ground Pepper, 2 tsp.
  • Salt, to taste
Procedure
Boil the chicken till it is nearly cooked, and set aside. In a saucepan, take some butter and cook the onions and celery, till they start giving out a nice flavor. Then, in a bowl, combine all the crumbled bread and toss in the onions and celery. Add the chicken broth and moisten the mixture. Next, add the boiled chicken, along with the herbs, pepper, and salt. Transfer this mixture into a baking dish and let it bake for about 30 minutes. Serve it hot.

With Onions and Celery Sticks

Ingredients
  • Cornbread, 7 cups (crumbled)
  • Diced Chicken, 2 cups
  • Chicken Broth, 2½ cups
  • Butter, 2 cups
  • Onion, 1 (medium, finely chopped)
  • Celery, ½ cup (fresh, finely chopped)
  • Salt, 1½ tsp.
  • Black Pepper, 3 tsp. (freshly ground)
  • Eggs, 2 (large, beaten)
  • Herbs, 2 tbsp. (dry, mixed)
Procedure
Boil the chicken and set it aside. Take a skillet and add butter to it. Then, add the chopped onions and celery to it, and sauté for some time. Do not let them turn brown. In a big bowl, combine the cornbread with the seasonings, cooked onion, celery, chicken, and the chicken broth. While mixing all of this, stream in the eggs too. Transfer the mixture into a crock pot or a slow cooker and cook it, covered, for about an hour on high temperature. Set the heat to low and allow the dish to cook for a further couple of hours, before it is ready to be served.

With Boiled Eggs

Ingredients
  • Chicken, 3 cans (boneless)
  • Cream Of Chicken Soup, 3 cans
  • Chicken Broth, 2½ cans
  • Cornmeal, 1 cup
  • Cornbread, few pieces
  • All-Purpose Flour, 1 cup
  • Milk, 1 cup
  • Baking Powder, 3 tsp.
  • Sugar, 2 tbsp.
  • Salt, 1 tsp.
  • Eggs, 6 (large)
  • Celery, 2 cups (finely chopped)
  • Onion, 1 (large, finely chopped)
  • Vegetable Oil, 2 tbsp.
Procedure
You can also choose to use green onion, instead of onion, if you want; whichever one you choose, ensure it is chopped finely. Boil the six eggs till they are hard-boiled. Chop them up in small portions. Take the cornmeal, flour, baking powder, sugar, salt, celery, and onion in a big bowl and mix them thoroughly.
Combine all the liquid ingredients like the oil, milk, cream of chicken soup, and chicken broth in another bowl and mix. Combine the dry ingredients with the liquid ones and add the chopped eggs. Crumble the cornbread and add it to the mixture. Transfer this into a baking dish and bake for about 45 minutes at 350° F.
