  • 1 large bunch celery, diced (3 cups)
  • 6 (10½ oz.) cans condensed chicken broth, undiluted
  • 3 cups buttermilk
  • 3 cups soft breadcrumbs
  • 3 cups white cornmeal

  • 2 tsp. baking powder
  • 1½ tsp. salt
  • 1 tsp. baking soda
Process
Firstly, add ½ cup butter to a 13" × 9" pan and heat in the oven for 4 minutes at 425ºF. Mix cornmeal, salt, flour, sugar, baking soda, and baking powder together. When well mixed, add 3 eggs along with buttermilk. Blend well and see to it that no lumps are formed.

Set aside. Melt the remaining butter in a pan over medium heat. Add celery and onions, sauté for a minute and then add sage and sauté for an additional minute.
Now add the remaining eggs, veggies, pepper, and chicken broth to the cornbread mixture. Mix well and then pour into a lightly anointed 13" × 9" baking dish and a lightly greased 8" square baking dish. Cover and chill for at least 8 hours. After the required time, bake uncovered for 35 to 40 minutes at 375ºF.
