Guide on How to Make and Use Compound Butter

If you wish to make some of your dishes creamier and tastier, try dressing them with compound butter. It can be easily made at home, and used in a variety of dishes.
Compound or flavored butter is modified butter, made by combining several herbs, spices, etc., into butter. While herbs are popularly used to make compound butter, you can use several other ingredients like spices and sauce. Making this butter at home is a simple process. Here is a recipe for the same.

Firstly, note that while making this butter, all the ingredients used should be dried and cooled. If you wish to add roasted ingredients (like garlic), you should fry, let the ingredients cool completely, and only then add in the butter. This way, it will gel properly.
Following is the simplest and the most popular recipe for making this exotic butter. Once you get to know the recipe, you can experiment with different herbs to create different flavors.
Ingredients
  • 1 pound of ordinary butter
  • 4 tablespoons of extra virgin olive oil
  • 2 tablespoons of chopped chives
  • 1 tablespoon of chopped rosemary
  • 1 tablespoon of chopped thyme
  • 1 tablespoon of chopped sage
Method of Preparation
  • Put all the herbs in the food processor and add the olive oil to it. Mix until a fine mixture is formed.
  • Now chop the butter into as small chunks as possible. Whip for 6-7 minutes, until it becomes smooth and light.
  • Next, add the mixture of herbs and olive oil to the butter and whip again to form a homogeneous mixture.
  • When the oil is fully incorporated, spoon the mixture in a plastic wrap or a parchment paper in the form of a log or roll.
  • Cover and chill for 2-3 hours. Chilling will make the butter easier to slice and use.

  1. Make compound butter using the aforementioned procedure (or innovate using your favorite herbs).
  2. If the butter is chilled, melt to soften it a bit.
  • Rub the butter on the external or the outer side of the turkey. You can also rub it over the breasts and in between the skin.

The following is the recipe for grilled steak with flavored butter.

Ingredients
  • 2 pounds of rib-eye steak
  • Compound butter
  • Kosher salt and ground black pepper to taste
Method of Preparation
  1. Season the steak with pepper and kosher salt.
  2. Heat the grill, and grill the steak for 7-8 minutes. Flip and grill on both sides.
  3. Cut the steak in desired pieces and serve with a dollop of butter on each piece.
