With summer around the corner, it is but natural for everyone to look forward to having something cool, refreshing, and healthy. Well, coconuts are quite synonymous with summers, but can be had in all seasons. The upcoming story dishes out coconut smoothie recipes which are bound to leave everyone asking for more!
A coconut is basically a fibrous one-seeded drupe. A drupe is essentially a fruit which has a hard, stony covering enclosing the seed. All drupes are known to have three layers, namely exocarp (outer layer), mesocarp (middle fleshy layer), and endocarp (the hard woody layer surrounding the seed). 
This tender fruit, though hard on the outside, is considered to be a wonder food packed with numerous health benefits.
They are a delicious source of minerals, vitamins, amino acids, calcium, potassium, as well as plenty of electrolytes. It has strong antioxidant properties, and is known to stabilize glucose levels, lower cholesterol, improve digestion, build cells, regulate hormones, and increase metabolism.
It has been recognized as a top immune booster, antibacterial, antiviral, and antibiotic curative for several years all over the world. As it can replace blood plasma in an emergency, water from young coconuts was extensively used in plasma transfusions for injured soldiers during the second world war. Smoothies are a popular way of incorporating this miracle fruit into one's diet.

Some Tips

  • Always prefer to add the liquids before the frozen ingredients. This is because the frozen elements can melt just enough to refreeze and clump together causing the blender motor to burn out.
  • You can choose to not throw away the coconut water, as it can either be used in the recipe or can be just had plain.
  • A natural coconut tends to give a better taste compared to a packaged one.

Pineapple-Coconut

In case you are using fresh pineapple, add it before the coconut. This is because fresh pineapple takes longer to blend than canned pineapple.
Ingredients
  • Pineapple juice: 1 cup
  • Banana: 1 (halved)
  • Coconut meat: ½ cup
  • Pineapple (cut): ½ cup
  • Coconut milk: ½ cup
  • Ice: ½ cup

Method
  1. In the first step, blend pineapple juice, ice, and banana together till the mixture attains a slushy texture.
  2. Next, add pineapple chunks and coconut milk. Blend the mixture till it becomes light, smooth, and luscious looking!

Vanilla-Coconut

This one is a perfect breakfast meal.
Ingredients

  • Coconut milk: 1 cup
  • Protein powder: 2 tablespoons
  • Virgin coconut oil: 1 tablespoon
  • Flaxseeds (ground): 1 tablespoon
  • Vanilla extract: 1 teaspoon
  • Almond extract: ¼ teaspoon
  • Stevia powder: ¼ teaspoon
  • Ice cubes: 8 to 10
Method

  1. First, blend coconut milk, protein powder, and coconut oil well. Continue blending till the oil is thoroughly mixed (improperly mixed oil can form lumps).
  2. Next, add flaxseeds, vanilla extract, almond extract, and stevia powder. Combine the ingredients thoroughly.
  3. Add ice cubes in the end.

Banana-Coconut

This recipe is enriched with the goodness of bananas along with coconuts.
Ingredients
  • Ripe banana (chopped): 1
  • Vanilla ice cream: 2 scoops
  • Coconut milk: ½ cup
  • Milk: ½ cup
  • Honey: 1 teaspoon
Method
  1. Blend together ripe banana and honey till it attains a pulpy consistency.
  2. Next, add coconut milk, vanilla ice cream, and milk. Blend till the mixture becomes utterly smooth.

Strawberry-Coconut

This one has an irresistible combination which is relished and loved by people of all ages.
Ingredients
  • Orange (peeled): 1
  • Strawberries (hulled): 2½ cups
  • Coconut milk: ½ cup
  • Ice cubes: 4
Method
  1. Blend together orange and strawberries till smoothened.
  2. Next, add coconut milk and ice cubes. Continue blending till the mixture turns into a delectable smoothie!
