Coconut Oil Recipes

Coconut oil is becoming extremely popular because of its health benefits. Reduced instances of heart attack, cancer, and colon disorders are observed in people, who are integrating it into their daily diet. All these health benefits may make you want to try out these recipes.
Coconut is easily available in the tropical areas and so is its oil. The oil is extracted from dried coconut and has many health benefits. It does not contain any saturated fats, which makes it beneficial for patients suffering from heart ailments, diabetes, and high-blood pressure.
Lauric acid, caprylic acid, and capric acid are its important constituents. These acids make it helpful in dealing with many viruses and bacteria. It is usually recommended for making food because it has lesser calories and the oil is easily converted into energy by the human body. Let's get to know some of the delicacies made from it.

Coconut Granola

Ingredients
  • Cooking Oats, 8 cups
  • Oat Bran, 1 cup
  • Almonds, (chopped) ¾ cup
  • Unsweetened Coconut, (flaked) 1 cup
  • Coconut Milk, ½ cup
  • Vegetable Oil, ¼ cup
  • Virgin Coconut Oil, ¼ cup
  • Barley Malt Syrup, ½ cup
  • Vanilla Extract, 1 tsp.
  • Honey, ½ cup
  • Dried Cranberries, ½ cup
Procedure
Mix oats, oat bran, almonds, and coconut. Bake this mixture in a preheated oven at 350° F. The oats are kept in the oven for 7-8 minutes, till they become crisp. In the meantime, combine coconut milk, oil, malt syrup, and honey in a cooking pan. Boil this mixture for 1-2 minutes and wait till the mixture comes to room temperature. Add vanilla extracts to this syrup.
The granola in the oven is cooled and the syrup is added, until it gets fully coated. Spread this coated granola on the baking sheets and toast it in a preheated oven for about 8 minutes. Let it cool down and then add cranberries with the crisp granola. Use an airtight container to store the cooled cereal. Dried pineapple or dates, instead of cranberries, can be added to get a different flavor.

Cream of Cauliflower Soup

Ingredients
  • Cauliflower, (chopped) 2 cups
  • Celery, (chopped) ½ cup
  • Onion, (chopped) ¼ cup
  • Coconut Milk, 2 cups
  • Organic Virgin Coconut Oil, 2 tbsp.
  • Curry Powder, ¼ tsp.
  • Flour, 2 tbsp.
  • Salt, 1¼ tsp.
  • White Pepper, ⅛ tsp.
  • Water, 1 cup
Procedure
Cook celery, cauliflower, and onion in water for about 20 minutes on a low flame, to make them tender. Blend the mixture in a blender at low speed. Heat some oil in a saucepan and add flour to it. Stir the flour frequently, until it turns brownish in color. Add coconut milk and stir the flour, till the mixture becomes even.
Combine the puree from the blender with the flour mixture in the cooking pan. Add curry powder, salt, and pepper. Stir till it becomes hot; but do not boil it. A healthy soup is ready.

Chicken in Coconut Milk

Ingredients
  • Broiler-fryer Chicken, 3 lb.
  • Coconut Oil, ¼ cup
  • Fresh Parsley Leaves, 1 sprig
  • Coconut Milk, 2 cups
  • Garlic Clove, (minced) 1
  • Dried Thyme, 1 tsp.
  • Onion, (finely chopped) 1
  • Hot Chili Pepper, 1
  • Mushrooms, (sliced) ¼ lb.
  • Salt and Pepper, as per taste
Procedure
Cut the chicken in small portions. Heat oil in a frying pan and fry the chicken pieces until they turn brown and crunchy. Keep this fried chicken aside. Sauté onion, garlic, and mushrooms for 3 minutes in the same frying pan. Put the fried chicken in the pan and add coconut milk, and pepper to it.
Take a cheese pouch and tie hot pepper, thyme, and parsley in it to make a bouquet garni. Add this to the chicken curry in the frying pan. Cover it and simmer till it becomes tender. Remove the bouquet garni, after simmering the chicken for 1¼ hours and serve it with boiled rice.

Pineapple Smoothie

Ingredients
  • Coconut Milk, 1 cup
  • Fresh Pineapple, 1 cup
  • Organic Virgin Coconut Oil, 2 tbsp.
  • Orange Juice, 1 cup
  • Banana, 1
Procedure
Mix the coconut oil and milk in a mixer. Then blend this mixture with the other ingredients and serve.
