Chorizo Sausage Recipes

Are you thinking about what are chorizo sausages, and how are they made? Given in this story are some simple recipes that you and your guests will surely enjoy.
Chorizo is nothing but any sausage made from pork. This cuisine has originated in erstwhile lberia, a region that includes modern states like Spain and Portugal. Spanish, Portuguese, and Mexican chorizos are some of its popular varieties. These sausages can be refrigerated and used when required. They can be simmered, fried, or barbecued, and eaten with bread, or any other addition.

#1: Using Tequila

Ingredients
  • Ground Pork, 2 lbs.
  • New Mexico Chilies, 3 (large and dried)
  • Chilies, 4 (small and dried)
  • Boiling water, ¼ cup
  • Garlic Cloves, 8 (minced)
  • Oregano Leaves, 2 tbsp. (dried)
  • Ground Cumin, 2 tsp.
  • Ground Black Pepper, 1 tsp. (fresh)
  • Sugar, 1 tsp. (dark brown)
  • Cider Vinegar, 4 tbsp.
  • Tequila, 2 tbsp.
  • Salt, 3½ tsp.
Procedure
To prepare it, first break New Mexico chilies into pieces, and combine them with small and dried chilies in a bowl. Then pour the boiling water over these chilies and leave them to become soft. Pour these chilies, along with the liquid into a food processor.
Add oregano, cumin, black pepper, vinegar, tequila, salt, garlic, and sugar to it and then grind the mixture to attain a smooth texture.
Transfer the ground pork and the liquid mixture into a large bowl, and blend the mixture, with the help of an electric mixer. Take a container or a sausage cast, and transfer this mixture into it. Place the container in the refrigerator and let it set properly.

#2: Using Brandy

Ingredients
  • White Vinegar, ½ cup
  • Sausage Casing, 1
  • Garlic Cloves, 6 (crushed)
  • Salt, 2 tsp.
  • Pork Lean, 2 lbs. (coarse grind)
  • Ground Cumin, 1 tsp.
  • Pork Fat, ¼ lbs. (finely chopped)
  • Black Pepper, 1 tsp.
  • Ground Cinnamon, ½ tsp.
  • Ground Cloves, ½ tsp.
  • Ground Coriander, ¼ tsp.
  • Ginger, ¼ tsp. (grated)
  • Oregano, 1 (dried and crushed)
  • Paprika, 2 tbsp.
  • Chili powder, 2 tbsp.
  • Brandy, ½ cup
Procedure
Take a large bowl and add pork meat and fat in it. Mix them properly, and then add pepper, cinnamon, cloves, coriander, oregano, garlic, salt, chili powder, paprika, cumin, vinegar, ginger, and brandy. Mix the ingredients using your hands, and then store the mixture into sausage casing. Hang the casing in a dry and cool place.

#3: Using Dry Red Wine

Ingredients
  • Ground Beef, 2 lbs.
  • Ground Pork, 1 lb.
  • Chili Powder
  • Oregano, ¾ tsp. (dried)
  • Garlic Cloves, 3 (minced)
  • Salt, 2 tsp.
  • Dry Red Wine, ¾ cup
  • White Vinegar, ¼ cup
Procedure
To prepare it, take a large bowl and combine ground beef, ground pork, garlic, salt, red wine, vinegar, chili powder, and oregano. Mix all the ingredients using your hands so that they incorporate properly. Cover the bowl with plate, and place it in the refrigerator for 2 to 3 days. Take them out of the refrigerator and store them in freezer bags, if you do want to use them for cooking.
