Chocolate-covered Strawberries Recipe

Preparing chocolate-covered strawberries is quite easy, simply because all you have to do is prepare chocolate sauce, dip the strawberries, and leave them to set. However, let's take a look at the details in the following story.
When fresh, red strawberries are dipped into glossy, hot, chocolate sauce, a mouth-watering dessert is born. Chocolate-covered strawberries are loved by all age groups, right from children to the elderly. In fact, this dessert is often associated with romance, and makes its appearance in most Valentine's day desserts.
They are also perfect for dinner parties, and since they're easy to prepare, you can serve homemade ones without shelling out too much money. Let's take a look at how this tempting dessert is prepared.

Using Dark Chocolate

Ingredients
  • 6 oz. (0.375 pound) dark chocolate chips
  • 25 to 30 ripe strawberries with stems intact
Preparation
Use a double boiler to melt the dark chocolate chips. However, while melting make sure no water droplets come in contact with the chocolate. Even a single drop can cause the chocolate to seize.
Once the chocolate melts, stir the mixture to temper it. This process imparts the shine to the molten chocolate. Once this is done, your chocolate sauce is ready.
The next step is to dip the strawberries in the sauce. To do this, hold the strawberries by their stalks. Dip a strawberry into the molten chocolate, and as you're about to take it out, give it a slight jerk.
Then, as the chocolate is completely withdrawn, you can swirl it in a clockwise direction. This will prevent cracks and give the coating a neat finish. Then, invert the strawberry, such that the tip of the fruit is on top. This will allow the chocolate to cover the fruit properly. Place the strawberries on a sheet of wax paper.
Allow the chocolate to harden at room temperature or place it in the refrigerator for half an hour. Do not leave them in the refrigerator for longer. This will cause condensation of water and the chocolate will 'sweat'. This may cause cracks in the chocolate, giving your delicate dessert an unappetizing look.

Using White Chocolate

Ingredients
  • 6 oz. white chocolate bar
  • 25 - 30 ripe strawberries
Melting White Chocolate

The method will be the same as that mentioned for dark chocolate. Since you're using a chocolate bar, you need to chop the chocolate into smaller pieces using a knife. Then melt the chocolate and temper it as per the instructions given above. The dipping process also remains the same.
Dip the strawberries holding the stems into the melted white chocolate. Give a jerk just before you remove the strawberry and once completely out of the chocolate sauce, give it a sudden clockwise swirl. Leave it on wax paper to set.
As you can see, melting chocolate is not difficult. Besides dipping strawberries you can dip various other fruits, cookies, marshmallows, etc., to increase the variety at the party.
