Marinade Recipes for Chicken Fajitas

The marinade, especially for fajitas, is always filled with intense, hot flavors. In order to follow the traditional recipe for fajitas, it's very important that you get the marinade right; it's what gives the meat its much-needed flavor.

Smokey Marinade

Ingredients
  • Garlic cloves, crushed, 4-5
  • Water, ⅓ cup
  • Lime juice, ¼ cup
  • Soy sauce, 2 teaspoons
  • Olive oil, 2 tablespoons
  • Liquid smoke, ½ teaspoon
  • Cayenne pepper, ½ teaspoon
  • Salt and black pepper, for taste
Directions
Take a big Ziploc bag to combine lime juice, olive oil, garlic, black pepper, cayenne pepper, soy sauce, water, salt, and liquid smoke properly. Add the chicken pieces inside the marinade, close the bag, and place in the refrigerator overnight. If you want to make fajitas the same day, keep the marinade in the refrigerator for at least 2 hours.

Sweet and Sour Marinade

Ingredients
  • Garlic cloves, crushed, 2―3
  • Beer, ¼ cup
  • Lime juice, ⅓ cup
  • Olive oil, 1 tablespoon
  • Brown sugar, 1 tablespoon
  • Cilantro, chopped, 1 tablespoon
  • Worcestershire sauce, 1 tablespoon
  • Cumin powder, ½ teaspoon
  • Salt and black pepper, for taste
Directions
In a Ziploc bag, combine garlic, olive oil, brown sugar, Worcestershire sauce, cilantro, ground cumin, beer, lime juice, salt, and black pepper properly. Once the brown sugar dissolves completely, place the chicken in a shallow bowl, and pour the marinade over it. Or, you can add the chicken pieces inside the Ziploc bag as well. Keep the bag in the refrigerator for at least 2 hours, or overnight.

Lemon Herb Marinade

Ingredients
  • Garlic cloves, crushed, 4-5
  • Sage leaves, chopped, 3
  • Jalapeño pepper, minced, 1
  • Olive oil, 8 tablespoons
  • Cilantro, chopped, 1 tablespoon
  • Oregano, 1 teaspoon
  • Lemon juice, ⅓ cup
  • Thyme, 2 sprigs
  • Rosemary, 2 sprigs
  • Salt and black pepper, for taste
Directions
To prepare the marinade, take a Ziploc bag and combine all the ingredients together. Add the pieces of chicken in the bag, close it, and keep it in the refrigerator overnight. If you want to cook the fajitas the same day, you can take the marinade out of the refrigerator after 2 hours.

Mustard-flavored Marinade

Ingredients
  • Garlic cloves, crushed, 4-5
  • Olive oil, 1 cup
  • Lemon juice, ½ cup
  • Dijon mustard, 2 tablespoons
  • Oregano, 2 tablespoons
  • Parsley, chopped, 2 tablespoons
  • Thyme, 1 sprig
  • Rosemary, 1 sprig
  • Salt and black pepper, for taste
Directions
The steps to make this recipe is alike the above ones. Take a Ziploc bag to mix all the ingredients in. Lock the bag and mix the ingredients properly. Open the bag to add the chicken pieces. Lock it again and place in the refrigerator overnight. To cook the fajitas the same day, you can cook the chicken after 2 hours.
