Healthy Celery Recipes That are Delicious

Celery is a widely used vegetable and is an important ingredient of the Cajun cuisine. This low-calorie vegetable is great for weight-loss and to add more fiber to your diet. Here are some soup and salad recipes made with celery.
Celery comes from the Apiaceae family, and is used as a vegetable. It is used around the world for its crisp leaf stalk. The leaves are very strong in flavor, and so are not used as commonly. They are sometimes added to soups and stews as a dried herb.
Recent times have seen this vegetable being called a 'negative calorie food', as it is believed that the body burns more calories trying to digest it than the body extracts from the vegetable. This is why celery is used in many weight-loss diets. It's also low in calorie count, and provides significant amounts of dietary fiber.

Soups

Soup Recipe #1

Ingredients:
  • 8 celery stalks
  • 2 cups boiling water
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cups milk
  • Salt
  • Pepper
Method:
  • Wash the celery and scrape it, then cut it into small pieces.
  • Cook until it becomes tender. If the water evaporates before the celery is cooked, add more water.
  • Mash the celery.
  • Scald the milk.
  • Take a saucepan, melt the butter in it, and add flour.
  • Slowly add the scalded milk to the butter and flour.
  • Stir continuously and let the mixture cook thoroughly.
  • Add this sauce to the celery.
  • Strain the mixture and add seasoning to taste.
  • Serve hot, with croûtons.

Soup Recipe #2

Ingredients:
  • 1 large onion (sliced)
  • 3 tablespoons flour
  • 3 celery stalks
  • 3 tablespoons butter
  • 3 cups milk
  • 1 cup cream
  • 1 teaspoon salt
  • ½ teaspoon pepper
Method:
  • Break the celery stalks into pieces.
  • Pound the pieces in a wooden bowl and mix with onion and milk.
  • Cook this mixture in a double boiler. Allow it to cook for 20 minutes.
  • Meanwhile, melt the butter and cook the flour along with the seasoning.
  • Add the cream, and then stir until the sauce thickens and boils.
  • Strain this sauce into the celery and milk.
  • Serve hot.

Salad Recipe #1

Ingredients:
  • Celery (washed and chopped)
  • Crab meat
  • Chicken (cold, cooked, and chopped into chunks)
  • Lettuce
  • Russian dressing
Method:
  • Place the lettuce on a plate.
  • Mix celery, Russian dressing, and chicken.
  • Arrange this mixture in the middle of the lettuce leaves.

Salad Recipe #2

Ingredients:

For salad
:
  • Green peas (cooked and cold)
  • Swiss cheese (grated)
  • Celery leaves (washed and chopped)
  • Lettuce
For mayonnaise dressing:
  • 2 egg yolks
  • 2 cups olive oil
  • 2 teaspoons mustard
  • 2 tablespoons vinegar
  • 1 teaspoon pepper
  • 1 teaspoon salt
Method:
Here is how you can prepare the mayonnaise dressing:
  • Mix the egg yolks with pepper, salt, and mustard.
  • Gradually add half a tablespoon of vinegar and half a cup of olive oil to that mixture, while stirring it constantly.
  • Just as the mixture thickens, add some more vinegar to thin it.
  • Continue adding vinegar and olive oil, until everything is properly combined.
To make the salad:
  • Place some lettuce leaves on a plate.
  • Mix the mayonnaise dressing, peas, and celery together.
  • Arrange this in the middle of the lettuce leaves.
  • To top it up, grate some cheese as per your preference.
