Ingredients:
  • 1 ½ cup flour

  • ½ teaspoon salt
  • ¼ cup cocoa
  • 1 tablespoon vinegar
  • 1 tablespoon vanilla extract
  • Small pieces of frozen cherries or strawberries
Method:

Take a large bowl and sift flour, baking soda, cocoa powder, sugar, and salt together. Add vegetable oil to the dry mixture, along with cold water, and mix thoroughly. Add vanilla extract to this mixture and mix well. Now, add the vinegar and beat the mixture well till it becomes smooth.
Then add the frozen cherries or strawberries. Pour the smooth batter in a greased baking pan and bake it at 350ºF in a preheated oven for 30 minutes. To check if the cake is done, insert a toothpick in it. Your cake is ready if the toothpick comes out dry. Cool it and top it with cream or chocolate sauce, as you like.

No-Egg Lemon Tofu Cheesecake

Ingredients for the crust:

  • Graham cracker crumbs, 2 cups
  • Maple syrup, ¼ cup
  • Almond extract, ¼ teaspoon
Ingredients for the filling:
  • Lemon juice, 1 tablespoon
  • Salt, ½ teaspoon
  • Almond butter or tahini, 1 tablespoon
  • Japanese-style silken tofu, 1 tablespoon
  • Sugar, ½ cup
  • Cornstarch dissolved in soy milk, 2 tablespoons
  • Grated lemon zest, 2 tablespoons
Method (To make the crust):

Mix together the cracker crumbs, maple syrup, and the almond extract in a bowl. Pour it into a pie plate. Make a firm crust by pressing the mixture in the pie plate. Bake it for 5 minutes in a preheated oven at 350°F. Cool it and keep it till the filling is made.
Method (To make the filling):

In a blender, take all the ingredients and blend well till it becomes smooth. Now, pour this smooth mixture on the cooled crust. Bake it in an oven for 30 minutes till the top turns golden brown. Cool it to room temperature and then chill it in the refrigerator for 2 hours or more. Your delicious lemon tofu cheesecake is ready to hit the table.

Eggless Orange Cake

Ingredients:
  • 1 cup fresh orange juice
  • ½ teaspoon baking soda
  • ¾ cup granulated sugar
  • 1 ½ cup flour
  • ⅓ cup vegetable oil
  • ½ teaspoon baking powder
  • 1 tablespoon grated orange zest
For the icing:

  • 3 tablespoons orange juice
  • 3 cups icing sugar
  • ½ teaspoon orange
Method:

Take flour, baking soda, baking powder, and sugar in a bowl and sift. Add vegetable oil to it. Then, add orange juice and orange zest, and stir well. Pour the mixture in a greased pan and bake for 40- 45 minutes till it turns golden brown on the top.
Mix the icing ingredients well till the mixture becomes smooth. When the cake has completely cooled, pour it over the cake, covering it completely. You can also put some fresh pieces of orange on the icing. Keep the cake in the fridge and frost it for about 30 minutes.

No-Egg Sponge Cake Recipe

Ingredients:
  • 2 ½ cups flour
  • ½ can condensed milk
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 60 ml melted butter or margarine
  • 1 teaspoon vanilla essence
Method:

Mix the flour, baking soda, baking powder, and sugar together. Take condensed milk in a bowl. Add melted butter and vanilla essence to it and stir well. Now, add the above flour mix to the milk and stir well. Remember to stir in one direction only.
Beat the mixture well for about 5-7 minutes. Then, pour it into a greased pan and bake for 40 minutes in a preheated oven at 200ºF. Cool it completely, and your eggless sponge cake is ready to be served.
