How to Make Buttermilk Biscuits

The aroma of freshly baked cookies is extremely captivating. Everybody likes to eat fresh biscuits with a cup of tea or coffee, as light snacks in the evening or with a glass of cold milk. These light snacks are liked by people of all age groups and can be had at anytime of the day.
They are available in a variety of flavors like chocolate, cream, whole wheat, milk, etc. Health conscious people always prefer to have healthy meals as well as snacks. Hence, biscuits made with buttermilk are one of the best options for them. They are low on calories, taste delicious, and can be easily prepared at home. Here are some easy recipes.

Basic Recipe

Ingredients
  • Baking Powder, 1 tbsp.
  • Baking Soda, 2 tsp.
  • All-purpose Flour, 4 cups
  • Salt, 1 tbsp.
  • Buttermilk, 1½ - 2 cups
  • Vegetable Shortening, 1 cup (should be cold and cut into ½ inch pieces)
Preparation

Mix the baking powder with flour, salt, and baking soda. Preheat the oven to 375° F. Cut the vegetable shortening with the help of a pastry blender. Blend it well and make a small depression in the center. Add 1 cup buttermilk in this space. Fold the mixture together immediately.
This will result in the formation of a sticky dough. You can now add more buttermilk depending upon the consistency you need for the dough.
Place the dough on a floured surface and fold it at least 4 times, overlapping the sides. This would help to create few layers. Then, press it firmly together and cut the same with the help of a biscuit cutter (3-inch). Place these biscuits on a cookie sheet and gently brush them with some buttermilk. Bake them for 20 minutes. Once they cool down, serve immediately.

With Goat Cheese

Ingredients
  • Baking Powder, 2 tsp.
  • Baking Soda, ½ tsp.
  • All-purpose Flour, 2 cups
  • Sugar, 1 tsp.
  • Salt, ½ tsp.
  • Buttermilk, 1 cup
  • Chilled Butter, ¼ cup (cut into 1/2-inch cubes)
  • Ground Black Pepper, ¼ tsp.
  • Chives, ¼ cup or ½ cup (chopped)
  • Fresh Goat Cheese, 5 oz. (crumbled)
Preparation

Begin by lining 2 baking sheets with some parchment paper. Meanwhile, preheat the oven to 400° F. Then, take a large bowl and mix baking powder, baking soda, flour, and sugar.
Also sprinkle some salt and pepper over this. Use your fingertips to rub the butter softly into the dry ingredients. Then, add chives, cheese, and buttermilk. Blend this mixture till it forms a sticky dough.
Place this dough on a separate surface and knead it gently. Mold it into a thick one-inch round shaped structure. Once you achieve the right consistency, cut this shape into 8 wedges.
Brush some buttermilk over the surface. Once done, place these wedges ½ inch apart from each other, on a large baking sheet. Do not grease this baking sheet. Place it in the oven and let it bake for 20 minutes. Cool it on the rack and serve it at teatime.
