  • Boneless turkey breast, 1 pound
  • Garlic cloves, peeled and chopped. 5
  • Fresh rosemary sprigs, coarsely chopped, 4 to 5
  • Coarsely ground black pepper, 1 teaspoon
  • Brown sugar, 1 tablespoon
  • Salt to taste
Instructions for Cooking
Before cooking the turkey breast, clean it thoroughly. In a small bowl, combine together the brown sugar, freshly ground black pepper and salt. Place the turkey breast in a slow cooker and add the garlic cloves and rosemary around it. Sprinkle the brown sugar mixture on the turkey and cover the cooker. On low heat, cook the turkey for about 5 hours till the meat is tender and the juices run clear.

Turkey Breasts with Tomatoes and Capers Recipe

  • Ripe plum tomatoes, cut into small cubes, 4
  • Capers, drained, ½ cup
  • Tomato paste, ½ cup
  • Fresh tarragon, finely chopped, 2 teaspoons
  • Shallots, finely chopped, 1 cup
  • Garlic cloves, minced, 6 to 8
  • Olive oil, ¼ cup
  • Red wine vinegar, 2 tablespoons
  • Butter, 2 tablespoons
  • Fresh parsley leaves, coarsely chopped, 5 tablespoons
  • Dry white wine, 1 cup
  • Ground white pepper, 2 teaspoons
  • Salt to taste
Instructions for Cooking
For cooking this skinless boneless turkey breast recipe, season the breasts with pepper and salt, and keep them aside. Place a heavy bottomed skillet over medium heat and heat the oil and butter together. Saute the turkey breasts in the skillet for about 5 minutes till they are browned.
Add the shallots and garlic to the skillet and continue cooking. Now transfer the tomatoes, capers, tomato paste, tarragon and wine and cook till the mixture begins to boil. Lower the heat and allow the mixture to simmer till the turkey cooks thoroughly.
Remove the skillet from the heat and transfer the contents to a platter. Sprinkle the chopped parsley to garnish and relish it hot.

Herb Roasted Turkey Breast and Pan Gravy Recipe

  • Boneless turkey breast, halved, 2 pounds
  • Medium-sized onion, peeled and coarsely chopped, 1
  • Fresh flat leaf parsley, chopped, ½ cup
  • Lemon zest, ¼ cup
  • All-purpose flour, ¼ cup
  • Fresh bay leaves, 6
  • Fresh sage leaves, 12
  • Apple brandy, ¼ cup
  • Butter, softened, ¼ cup
  • Extra virgin olive oil, 5 tablespoons
  • Apple cider, 2 cups
  • Freshly ground black pepper, 2 teaspoons
  • Salt to taste
Instructions for Cooking
This is one of the most fantastic roasted boneless turkey breast recipes that is enjoyed by the young and old alike. Remove the skin from the onion and chop it coarsely in a food processor. Peel the zest of the lemon and add it to the chopped onion in the processor jar.
Now process till the onions and lemon zest are finely chopped. To this mixture add the parsley, sage, olive oil, salt and blend them together till a coarse paste is formed. Meanwhile season the turkey breasts with salt and pepper. Separate the skin and flesh carefully to form a pouch, and spread the paste evenly.
Heat butter in a pan over medium heat and saute 2 bay leaves in it. Once the leaves turn slightly dark, place the prepared turkey breasts on them and roast for about 15 minutes till they get the flavor of the bay leaves.
Transfer these breasts to a baking tray and apply a coat of the butter and bake it in a preheated oven at 400 ºF for about 20 minutes.
Remove the turkey breast and baste it with the leftover butter and continue roasting for 25 more minutes after reducing the temperature to 350 ºF. Once the breasts have completely cooked, remove them from the oven and place them on a platter.
For the gravy, heat the same pan on the burner and add the flour to it. Stir to cook the flour in the pan's juices till it becomes crusty. Pour the apple brandy to scrape the crusts from the pan and allow it to simmer, by reducing the heat. Now add the apple cider, while continuing to stir and sprinkle pepper and salt to taste. Once the gravy begins to thicken remove the pan from the heat. Slice the turkey breasts and place them on a plate. Pour the gravy over the slices and serve hot.
