Recipes for Boiled Eggs

Recipe #1

Ingredients:

Hard-boiled eggs, sieved - 5
Sprigs fresh parsley, chopped - 6
Asparagus, trimmed - 6 lb
Vegetable oil - ¾ cup
Wine vinegar - 3 tbsp.
Mustard - ½ tbsp.
Chopped fresh chives
Ground pepper
Salt

Direction:

Cover the asparagus in a container with boiling water and let it simmer until it becomes tender crisp. Pour cold water and drain well. Thereafter, refrigerate. Mix the boiled eggs, parsley, and chives to make a mimosa. Make a dressing by mixing the mustard with the vinegar and add the oil while you are beating the mixture constantly. Season it with the pepper and salt. Coat the asparagus with the dressing and sprinkle the mimosa over the tips of the asparagus before serving.

Recipe #2

Ingredients:

Hard-boiled eggs - 6
Green onions - ¼ cup
Mayonnaise - 3 tbsp.
Mustard -2 tsp.
Soy sauce -1 tsp.
Chile paste with garlic - 1 tsp.
Szechuan peppercorns, toasted - 1 tsp.
Sugar - ½ tsp.

Directions:

After shelling the eggs, cut them into halves and remove the yolks. Placing the yolks in a separate bowl, add scallions, mayonnaise, mustard, soy sauce, chile paste, peppercorns, and sugar to it. Make a smooth mix out of it and spoon this mix into the whites. Serve after sprinkling the whites with the chopped scallions.

Recipe #3

Ingredients:

Hard-cooked eggs, peeled and quartered - 6
Yellow onion, peeled, thin slices - 1 large
Garlic, peeled and minced - 1 large clove
Walnuts - 1 cup
Margarine - ½ cup
Almonds - ½ cup
Worcestershire sauce - 1 tbsp.
Pepper and salt to taste

Directions:

Fry onion, garlic, and mushroom in a little fat until soft. Keep stirring and ensure that the mix does not become brown. Mix the eggs, almonds, and walnuts in a food processor until minced. Thereafter, add the previous mixture, sauce, salt, and pepper and continue processing. Refrigerate this mix for about two hours. Before serving, let the dish sit for about 30 minutes. Enjoy with crackers, melba toast, or toasted bread rounds.

Recipe #4

Ingredients:

Hard-boiled eggs - 4
Mayonnaise - 2 tbsp.
Red onion, minced - 2 tbsp.
Red bell pepper - 2 tbsp.
Kalamata olives, minced - 2 tbsp.
Parsley, minced - 1 tbsp.
Capers - 1 tbsp.
Mustard - 1 tsp.
Salt and pepper

Directions:

After chopping the eggs, mix them with red onion, mayonnaise, mustard, bell pepper, olives, parsley, capers, salt and pepper. Your boiled egg recipe is ready!

Recipe #5

Ingredients:

Hard-boiled eggs - 6
Warm milk - 1 cup
Beef or chicken broth - ½ cup
Butter - 2 tbsp.
Onion, finely minced - 1 tbsp.
All-purpose flour - 1 tbsp.
Curry powder - 1 tsp.
Lemon juice
Salt to taste

Directions:

Fry the onion slices in the butter for a brief period and add curry powder, salt, and flour. Cook for about 1 - 2 minutes. Put off the heat and gradually stir in the broth and milk. Thereafter, put on the heat and after bringing the mix to a boil, simmer and cook for 10 minutes. After this process, you should get a smooth and slightly thick soup. Now cook the eggs in the sauce until they are hot, but not boiled. Serve with hot rice and add a few squeeze of lemon juice to it.
