Ingredients
  • 2 cups flour
  • ½ cup milk
  • 2 cups blueberries
  • 1 cup sugar
  • 2 eggs
  • ½ cup butter
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Cinnamon mixed with sugar for muffin topping
Directions for Preparation
In a mixing bowl, combine and cream together sugar and butter. To this, add eggs one by one, while stirring continuously to blend the mixture. Add the flour, baking powder and salt and stir well for another 3-4 minutes. Pour milk and add vanilla to make a smooth batter. Now, divide the blueberries into two and mash a portion of them.
Add the mashed blueberries to the muffin batter. Then, add the remaining whole blueberries in the batter. Take muffin cups and grease with edible oil. Fill tins and sprinkle the muffins with sugary cinnamon powder. Bake the blueberry muffins at 375 degrees Fahrenheit for about 30 minutes.

Ingredients
  • 4 cups all-purpose flour
  • 2 cups blueberries

For making blueberry muffins with lemon-flavored toppings, preheat oven to about 400 degrees Fahrenheit and prepare muffin cups by greasing them with oil. Prepare topping by combining the grated lemon rind with wheat germ (2 teaspoons) and sugar (2 tablespoons). Take a large bowl and combine together flour, sugar (3 tablespoons), wheat germ (¼ cup), baking powder and salt.
In another small bowl, mix oil, milk and egg. Mix well and add this milk mixture into the flour mixture. Stir well to make a smooth batter and add the berries. Fill the greased cups with batter, ensuring that you do not overfill them. Sprinkle toppings and bake for about 20 minutes.
