When sugar syrup is boiled, we get molasses. At the first stage or first time boiling process of sugar syrup, it is called first molasses or mild molasses. When sugar syrup is boiled for the second time, it is known as second or dark molasses. To obtain blackstrap molasses, the sugar syrup is boiled for the third time.
At this stage, the sucrose of the original juice turns into crystals and is removed. This in turn makes the molasses low in calories as the sugar content is very little. On the other hand, you can easily find rich sources of calcium, iron, magnesium, and potassium in blackstrap molasses.
Due to this, the molasses is sold in various health stores as supplements and used as cattle feed ingredient. But let's not go about finding more health benefits of this molasses and instead, go over some healthy recipes.

Gingerbread Cake

Ingredients
  • 3 cups All-purpose flour
  • 3 eggs, room temperature
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 cup butter, unsalted
  • 1 cup dark brown sugar
  • 1 packed tablespoon ginger root, grated
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ teaspoon allspice
  • ½ cup 2% milk
  • ½ cup water
  • 1/8 teaspoon ground cloves
  • ¾ cup honey, unflavored
  • ¾ cup unsulphured blackstrap molasses
  • Whipped cream, to serve
Directions
Preheat the oven at 325º F, grease a baking pan, and lay parchment paper in it. In a pan, mix butter, water, honey, brown sugar, and molasses together and keep heat on low. When the butter melts and the ingredients mix well, remove the pan from the stove and transfer in a bowl. Leave the bowl on the side so that the mixture cools down.
In another bowl, mix flour, salt, ginger, cinnamon, allspice, baking soda, and cloves properly. When the molasses mixture has cooled down a bit, add each egg at a time and whisk thoroughly. Add milk as you whisk to combine the eggs properly. Next, add the dry ingredients with the molasses mixture and fold it properly.
In the end, add the grated ginger. Now we will transfer the batter into the baking pan and place in the oven for about an hour or so. When the cake is ready, turn the oven off, remove the pan from the oven, and leave the cake to cool down for about 10-15 minutes.
Then, use the parchment paper to lift the cake out and cut pieces. Spread whipped cream on top and serve warm.

Ginger-Cinnamon Cookies

Ingredients
  • 6 cups All-purpose flour
  • 3 eggs
  • 3 cups packed brown sugar
  • 2 cups butter, softened
  • 2 tablespoons baking soda
  • 2 teaspoons cloves, ground
  • 2 teaspoons ginger, ground
  • 1 cup sugar
  • 1 cup raisins
  • 1 cup nuts, chopped
  • 1 tablespoon cinnamon, ground
  • ½ cup blackstrap molasses
Directions
Preheat the oven at 350ºF and place parchment paper on the baking sheet. In a bowl, mix flour, cinnamon, ginger, cloves, baking soda, and salt together. In a mixing bowl with beater, beat the butter till it's creamy. Slowly add brown sugar and molasses in the bowl. Make sure you scrape the bowl from time to time and mix everything well.
In the end, add each egg one by one and make the mixture light and fluffy. Again scrape the bowl and now start adding the dry ingredients mix. In the end, add raisins and nuts to prepare the dough. Place a cheese cloth on the dough for half an hour and let it rest. Next, make small balls and roll the cookie balls in sugar.
Place each cookie ball onto the cookie sheet and into the oven for 10-15 minutes. Once the cookies are ready, remove the sheet out and let the cookies cool down properly. Serve the molasses cookies with milk.

Molasses-Raisin Muffins

Ingredients
  • 2 cups bran cereal flakes
  • 2 tablespoons vegetable oil
  • 1 ¼ cups skim milk
  • 1 ½ teaspoons baking soda
  • 1 cup All-purpose flour
  • 1 egg, beaten
  • ½ cup raisins
  • ½ cup blackstrap molasses
  • ¼ teaspoon salt
Directions
Preheat the oven at 375ºF and grease the muffin pan. Take a bowl to mix flour, salt, and baking soda together. In a different bowl, to combine skim milk, vegetable oil, molasses, and eggs in. Properly whisk the ingredients and make a smooth mixture. Add the bran cereal in last along with the dry ingredients.
Fill the muffin cups with the batter and place into the oven. Bake the muffins for about 20-25 minutes. Test it with a toothpick to check if the muffins are ready. Once done, remove from the oven and let them cool down for about 10 minutes or so. Serve the muffins warm or at room temperature.
