Biscuit Recipes from Scratch

Homemade biscuits are always preferred to store-bought ones. Here are some biscuit recipes that can be prepared from scratch.
Most us crave for those yummy homemade biscuits that we relished during our childhood. Nowadays, we prefer biscuits from supermarkets, rather than baking some at home. Baking biscuits at home is considered a daunting task, and we often find it easier to buy them. However, it is very easy to make biscuits from scratch, if you know the right methods.

Buttermilk Biscuits From Scratch

Ingredients
  • All-purpose flour - 2 cups
  • Cold buttermilk - ¾ cup
  • Chilled, unsalted butter - 7 tbsp.
  • Baking powder - 2 tsp.
  • Baking soda - ¼ tsp.
  • Salt - 1 tsp.
How to Prepare
Combine flour, baking powder, baking soda, and salt. Cut the chilled butter into thin slices, and mix with the dry ingredients. You may use a wire pastry blender for this purpose. Mix the butter and flour mixture, till it transforms to coarse crumbs. The next step is to add buttermilk to the crumbs, and mix them well to form a sticky dough.
Knead the dough thoroughly to a ball, and place it on a floured surface. Pat the dough with floured hands into a ½-inch thick base. Use a biscuit cutter of your choice to cut the dough, and place the pieces on a baking sheet.
Make sure to leave some space between the pieces for expansion, while baking. Place the baking sheet in the oven, which is preheated to 425°F. Bake the biscuits for around 10 to 12 minutes, or till they turn golden brown. Wait for the biscuits to cool, before serving.

Fluffy Biscuits From Scratch

Ingredients
  • Bread flour - 2 cups
  • Egg yolk - 1
  • Milk - 2/3 cup
  • Baking powder - 5 tsp.
  • Shortening - 2 tbsp.
  • Sugar - 1 tbsp.
  • Salt - 1 tsp.
How to Prepare
Make sure to sift the bread flour before measuring. Once you are ready with the required amount of ingredients, sift bread flour and baking powder for two to three times. Add sugar and salt to the sifted flour and mix thoroughly. Blend the shortening to the flour.
You can do it with your hand or using a wire pastry blender. Add the lightly beaten egg yolk and milk mixture to the flour, and knead well to form a ball. Place the dough on a floured surface, and pat it with floured fingers to a thickness of around ½ to ¾ inch.
You have to cut biscuits from this base, and arrange those pieces on a baking sheet. Bake the biscuits for 10 to 12 minutes, in the oven that is preheated to 425°F. Let them cool, before serving.
