Bellini cocktail was first made in the 1930s at Harry's Bar in Venice, Italy, by a bartender by the name of Giuseppe Cipriani. Giuseppe named this cocktail after his favorite painter Giovanni Bellini. Originally, Bellini cocktail is made with fresh peach puree, raspberry puree and sparkling Italian wine.
However most bartenders use Champagne and peach juice to make this delicious cocktail. Because of the subtle pink color of this cocktail drink, many heralded it as a drink for the ladies. But this delectable and refreshing peach Bellini recipe can be enjoyed by everyone. Of course, there are several versions of the Bellini and all of them are equally delicious. It is the perfect cocktail drink to serve at a party or serve friends at a casual get together.

Original Bellini Recipe

Ingredients
  • 1 bottle chilled Italian sparkling wine (such as Prosecco)
  • 2 tablespoons fresh white peach puree
  • 1 teaspoon fresh raspberry puree
Method
In a champagne flute, add 2 tablespoons of fresh peach puree and then pour chilled Italian sparkling wine over it. Next add 2 tablespoons of raspberry puree into the glass. The raspberry puree will add a tinge of light pink to the wine. Your Bellini recipe is done and you need to serve this immediately.
It is best to make your own fresh raspberry puree and peach puree for the most authentic taste of this cocktail. If you use store bought canned puree for the cocktail, it will change the flavor of the drink and you will not be able to taste the fresh and fruity taste of the peach and raspberry.

Frozen Bellini Recipe

Ingredients
  • 1 bottle of chilled Champagne
  • ¼ cup peach nectar
  • 1/8 cup peach schnapps
  • 1 tablespoon freshly squeezed lemon juice
  • ½ cup crushed ice
Method
In a tall glass, combine the peach nectar with the freshly squeezed lemon juice and peach schnapps. Transfer this mixture into a champagne flute. Now add the crushed ice into the champagne flute and top it with champagne. Stir to combine everything together and serve immediately. This frozen Bellini recipe is great for hot summers, as well as a Sunday brunch party with friends and family.

Non Alcoholic Bellini Recipe

Ingredients
  • 1 glass sparkling cider
  • 2 tablespoons peach puree
  • ¼ cup peach nectar
  • 1 tablespoon freshly squeezed lemon juice
Method
If you want to try one of the non alcoholic Bellini recipes, you need to substitute Italian wine with parkling cider. Add the peach puree and peach nectar in a champagne flute, and then gently pour the sparkling cider. Serve immediately.

Bombay Bellini Cocktail

Ingredients
  • 3 tablespoons fresh mango puree
  • 1 bottle of chilled champagne
  • 1 fresh mango slice
Method
In a champagne flute add 3 tablespoons of mango puree, and then pour the chilled champagne into the flute. Stir gently and serve garnished with a slice of fresh mango. This version of Bellini cocktail does not have the characteristic rose pink color. But nevertheless it is a very tasty cocktail drink.
