Girija Shinde
Belgian waffles are different from the usual waffles when it comes to taste, size and shape. Though almost the same ingredients are used to make these waffles, the resulting recipe tastes quite different. Read on to know more about Belgian waffle recipes from scratch.

Recipe 1

Ingredients
  • 6 eggs, separated
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 2¾ cups warm milk (110°F)
  • ¾ cup butter, melted and cooled
  • ½ cup white sugar
  • ¼ cup warm milk (110°F)
  • 2 tsp. vanilla extract
  • 1½ tsp. salt
Process
Take a small bowl and pour ¼ cup milk in it. Dissolve the yeast in the milk. Let it stand for about 10 minutes until creamy. Meanwhile, take a large bowl and whisk ¼ cup milk, egg yolks, and the cooled butter in it. Also stir in the salt, sugar, vanilla, and yeast mixture. Next, add in 2½ cups milk alternately with flour.
Mix in egg whites and stir until soft peaks form. Add this mixture to the batter, cover it well, and let the arrangement stand in a warm place for about 1 hour. Use only when the mixture doubles in volume.
Now preheat the waffle iron, brush it with oil, and spoon about ½ cup mixture onto the center of the iron, close the lid and bake until the waffle is golden brown in color and the waffle iron stops steaming. Top the waffles with butter and whipped cream and serve with maple syrup immediately.

Recipe 2

Ingredients
  • 4 large eggs, separated
  • 2 cups milk
  • 2 cups cake flour
  • 4 tbsp. unsalted butter, melted
  • 2 tbsp. sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. vanilla extract
Process
Preheat the waffle iron. Take a medium-sized bowl and sift flour, salt, and baking powder in it, and set aside. Take another bowl, add egg yolks to it, beat with the help of a wooden spoon, and then add in sugar. Mix until sugar is dissolved. When the egg turns pale yellow, add in milk, vanilla extract, eggs, and melted butter; whisk to combine. Add this concoction to the flour mixture until slightly blended. Do not over mix. Set aside.
Beat the egg whites with an electric mixer for about 1 minute until soft peaks are formed. Fold the egg white mixture into the batter using a rubber spatula and mix slightly. Now coat the waffle iron with a nonstick cooking spray and pour the waffle batter until the waffle iron gird is covered. Cook for about 2-3 minutes until golden brown. Serve immediately. As you may have noted, this recipe does not require the usage of yeast.

  • 1 cup softened butter
  • ⅓ cup lukewarm water
  • 1½ tbsp. granulated sugar
  • A pinch of salt
