Halibut, as most of the seafood, cooks in a small amount of time. While baking the fish at 400 degrees Fahrenheit, it will take around 10 to 15 minutes to cook it thoroughly.
Baked Halibut Fillets
Ingredients:
4 halibut fillets
2 tbsp lemon juice
2 tbsp cilantro, finely chopped
4 green onions, finely chopped
¼ cup red bell pepper, finely chopped
2 garlic cloves, minced
1 tbsp crushed red pepper flakes
¼ cup dry white wine
1 tsp dried dill weed
1 tsp dried tarragon
1 cup chicken broth
½ cup low-fat cream
½ cup grated Parmesan cheese
1 tbsp All-purpose flour
Toasted almond slivers
1 tbsp butter
Salt and pepper, to taste
¼ cup water
Method:
Heat the oven at 350 degrees Fahrenheit.
Season the fillets with salt, pepper, and 1 tbsp of lemon juice.
Place the fillets in a greased baking dish and bake it for 10 to 15 minutes.
In a skillet, melt butter and add chopped onions, and let it cook till onions are translucent.
Add red bell peppers, garlic, and pepper flakes till the red bell peppers soften.
Add wine, dill, and tarragon, and let the mixture simmer for about 2 to 3 minutes.
Chicken broth, cream, cheese, and remaining lemon juice can now be added.
Stir well, and add salt and pepper as per taste.
Let the mixture come to a boil.
In the meantime, make a paste with flour and water, and add it to the mixture.
Let the sauce simmer till it thickens.
Once the fish is cooked, add to the pan and coat it with the sauce thoroughly before serving with cilantro leaves garnished on top.
Baked Halibut Steaks
Ingredients:
4 halibut steaks
1 onion, finely chopped
½ cup low-fat cream
1 tbsp fresh dill, finely chopped
1 tsp olive oil
1 tsp butter
Salt and pepper, to taste
Method:
Season halibut steaks with olive oil, salt, and pepper.
Place the steaks in a greased baking dish in a single layer.
Top the steaks with chopped onion, dill, and small dots of butter.
Cover it with cream and let the steaks bake for 20 to 25 minutes at 350 degrees Fahrenheit.
