Baking a Marble Sponge Cake: It's a Cakewalk!

Here's a quick and easy recipe to make a spongy marble cake. The fact that you can bake it in less than an hour is the 'cherry on the cake'!

Ingredients

6 eggs

250 grams sugar

2 tsp vanilla essence

230 grams all-purpose flour

100 grams butter

2 tbsp cocoa powder
Preheat the oven to 180°C for 20 minutes.
Melt butter on a low flame or in a microwave.

Beat sugar and eggs with an electric blender until the mixture turns white.
Add 2 tsps of vanilla essence and continue mixing.

Sift and add all-purpose flour to the mixing bowl.
Add softened butter to the mixture, and gently mix it further in a CLOCKWISE direction.
The batter should reach a semi-solid consistency.
Grease the base of the cake tin. Keep 1/3rd batter in a separate bowl.
Out of the remaining mixture pour 1/2 of the batter into the tray forming the first layer.
Add 2 tbsp of dark cocoa powder to 1/3rd batter to form the middle layer.
Make a chevron design while pouring the mixture.
Add rest of the mixture over the first 2 layers.
Use a skewer to create marbled patterns of white and brown.
Bake the cake in the pre-heated oven on the middle shelf, for around 40 minutes.
As you can see, baking this marble cake is a 'piece of cake,' literally!
Once the cake cools down, cut it into small wedges and it's ready to serve!
