However, what remains the same for each recipe is the fact that for every large, luscious scallop one strip of bacon is required, and for every small juicy scallop half a strip would suffice. While purchasing scallops, get the ones that are mostly symmetrical for better presentation.
Rinse these scallops with running tap water and pat them dry. These are the basics, irrespective of the recipe one chooses.

Grilled Bacon Wrapped Scallops

Ingredients
  • 2 pounds large, fresh scallops
  • 15-24 strips of bacon (as per requirement)
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • Black pepper to taste
Preparation Procedure
For grilling these scallops you need at least 8 wooden skewers. Take these skewers and soak them in water an hour before you want to use them. To begin with the preparation, take red wine vinegar, black pepper, olive oil in a mixing bowl and mix it.
Add the scallops into the bowl and toss till all the scallops get coated evenly with the mixture. Allow the flavors of the wine and oil mixture to seep into the membrane of the scallop for the next 10 minutes. Meanwhile, preheat the grill on medium heat. Now take a scallop from the bowl and wrap a strip of bacon around it.
Pierce the skewer through it. Each skewer can hold 3-4 scallops. Slightly oil the grill rack and place the skewers on them. Grill them for 3 minutes each side. The best test is checking for opacity. If the scallops have turned opaque, they are ready to be taken out from the grill.

Baked Bacon Wrapped Scallops

Ingredients
  • 20 slices bacon
  • 40 large sea scallops
  • 2 cups whipping cream
  • 4 tbsp Dijon mustard
  • 4 tbsp pure maple syrup
  • Salt and pepper to taste
  • Fresh chives
Preparation Procedure
In this recipe the bacon is first baked in an oven that is preheated at 350 degrees Fahrenheit. In a baking dish place bacon slices and bake for 8 minutes. The bacon strips will turn golden brown. Slice the bacon crosswise in half and allow it to cool. Once it's cool, take each strip of bacon and wrap it around the scallop.
Use a toothpick to hold the bacon and scallop together. In an oven, preheated at 400 degrees, place the bacon wrapped scallops on a baking dish and bake for 10 minutes. While the scallops are being baked in the oven, take a large pan and boil the cream, till half of the cream gets reduced.
Now, add the mustard and maple syrup to it and heat till a smooth sauce like consistency is obtained. Sprinkle some salt and pepper to taste. Ladle out the sauce on a serving plate. Your scallops will be ready by now. Take them out, pull out the toothpicks carefully and place them onto the sauce. Snip some fresh chives onto them and serve.

Crock Pot Bacon Wrapped Scallops

Ingredients
  • 10-12 Bacon strips
  • 1 ½ pounds Fresh Scallops
  • Lemon juice (from 2 lemons)
  • 1 tsp Black pepper
Preparation Procedure
In a bowl take lemon juice and add a teaspoon of black pepper into it. Dunk the scallops into this lemon-pepper mixture and toss them well. Refrigerate the mixture for 2 hours, after which you take each scallop and wrap the bacon strip around it. Pierce a toothpick into it to hold the bacon and scallop together. Place them gently in your crock pot and cook them slowly for 2-4 hours.
While preparing bacon wrapped scallops, make sure you do not overcook the scallops because they tend to become hard and chewy. If you wish to caramelize your scallops you can brush some maple syrup onto them before cooking. They are truly a treat for all seafood lovers!
