Easy Artichoke-Spinach Dip

Ingredients
  • 2 packages of frozen spinach
  • 1 can artichokes (drained and chopped)
  • 2 bars of cream cheese
  • 1 cup Italian cheese (Parmesan or Romano)
  • ¼ cup dry Parmesan
  • ¼ cup mayonnaise
  • 6 - 7 garlic cloves
  • Salt and pepper as per taste
Directions for Preparation
First of all, thaw the frozen spinach; you can add spinach in a colander and pour hot water over it. Squeeze them to drain remaining water and chop. Then, switch on the oven and set the temperature to 400° F. Soften cream cheese in a microwave safe bowl or cup.
Following this, stir in Italian cheese, dry Parmesan, mayonnaise, garlic, salt and pepper in the bowl. Add spinach and artichoke, and combine well the mixture. You can sprinkle shredded cheese on top of the dip ingredients. Cook in the oven for 15 - 20 minutes. Serve this luscious dip with toasted chips or bread.

Hot Artichoke-Spinach Dip

Ingredients
  • 10 ounces (or 1 packet, frozen) spinach (chopped)
  • 14 ounces (or 2 cans) artichoke hearts (chopped in small chunks)
  • 1 (8-ounce) packet cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • ¼ cup grated Romano cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ cup mayonnaise
  • 1 cup grated pepper jack cheese
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic salt
  • Salt and pepper to taste
Directions for Preparation
Preheat oven to about 350° F. Grease a baking pan with non-stick cooking spray. Take a medium size mixing bowl and combine together the ingredients - softened cream cheese, Parmesan cheese, Romano cheese, mayonnaise, basil powder, garlic, salt and pepper. Following this, stir in artichoke and spinach.
Toss well to mix the ingredients properly. Transfer this into the baking pan and add mozzarella cheese on top of the dip mixture. Bake in the oven for 20 - 25 minutes, until cheese is melted. Have this hot dip with bagel chips.

Crock-pot Artichoke-Spinach Dip

Ingredients
  • 1½ cups frozen spinach
  • 1 (14-ounce) can artichoke hearts (chopped)
  • 8 ounces cream cheese (softened and cubed)
  • ½ cup mayonnaise
  • ¼ cup grated Havarti cheese
  • ½ cup Alfredo sauce
  • 1 (6-ounce) can crabmeat (optional)
  • Salt and pepper to taste
Directions for Preparation
In order to prepare this dip in crock pot, thaw frozen spinach, drain water and also, press gently to remove excess water. Using a kitchen knife, chop spinach and artichoke hearts. In a slow cooker, combine chopped spinach and artichoke with the remaining ingredients - cream cheese, mayonnaise, Havarti cheese, Alfredo sauce, crabmeat, salt and pepper. Cover lid, set it in a low temperature and cook for approximately 2 - 3 hours. You can have this slow cooked dip with carrot sticks and crisp crackers.
