Almond Milk Recipes

Almond milk is commonly prepared by grounding already soaked almonds with water. This story helps you understand how much almond and water should be used to make this preparation.
Almond milk is derived from finely grounded form of almonds. It is added as an excellent substitute for animal based milk in several food recipes. Almond milk is popularly used in the Middle East as a protein rich beverage. Unlike animal milk, it contains zero lactose with negligible amounts of saturated fat. Thus it serve an ideal drink for people who have lactose intolerance. Being derived from seeds, this milk is also a favorite beverage for pure vegans.
The advantages of almond over animal-based milk are mainly attributed to ease in storage and preparation. While animal milk gets soiled if immediate boiling is not done, almond milk can be kept for an extended period without spoiling. Various brands of this milk are available commercially in food stores with different flavors, such as vanilla and chocolate. Apart from this, you can also opt for plain milk without any added flavors. You can also make this beverage at home.

Plain Almond Milk

Ingredients
  • Almonds, 1 cup (roasted)
  • Filtered water, 3 - 4 cups
  • Glass jars
  • Electric blender
Directions
  • In a large glass jar, add 1 cup freshly roasted almonds. Pour 3 - 4 cups filtered water in the jar.
  • Put on the jar lid tightly and keep it in the refrigerator for 1 or 2 days.
  • After that, blend the soaked almonds in an electric mixer until you get the consistency of a puree.
  • Using a clean cheesecloth, strain the puree to separate liquid and pulp. Press the cheesecloth gently to drain the last traces of thick almond milk.
  • So, you get concentrated almond milk. Do not throw away the pulp; you can use it as toppings in rice, cereal and vegetables.
  • You can add 2 - 3 cups water to make the desired consistency and drink. Use the milk in food recipes or drink it alone.

Almond Milk with Maple Syrup

Ingredients
  • Raw organic almonds, 1 cup
  • Organic maple syrup, 2 tbsp.
  • Filtered water, 3 cups
  • Utensil and blender
Directions
  • In a saucepan, add almonds for soaking. Pour water until the level reaches to about 1 inch above the almonds. Soak almonds overnight.
  • Next day, wash and rinse the almonds several times. In between, boil 3 cups of water in a saucepan.
  • Add almonds in an electric mixer and blend until you get a fine textured almond powder.
  • Pour 2 cups hot water and 2 tablespoons maple syrup in the mixer, and blend again for 3 minutes.
  • In order to separate out the milk, filter this almond water mixture through a medium-sized fine strainer.
  • The next step is adding the almond pulp or fiber from the strainer to the mixer. Then, pour the remaining 1 cup hot water and blend.
  • Strain almond mixture and apply pressure to squeeze out all liquid. From this recipe you will get approximately 3 cups organic almond milk.
If you have a very hectic schedule and have less time to make almond milk, prepare almond powder and store it in an airtight container. Use this ready-made almond powder instead of going though the procedure of grinding soaked almonds.
