Almond Milk Ice Cream

Almond milk ice cream is a delicious treat, especially for those who want to replace regular ice cream for various reasons. Here are some simple recipes for making this ice cream at home.
Almond milk is a healthy and nutritious alternative to animal milk. You can either prepare almond milk at home or use store-bought ones. It can also be used as a substitute for animal milk in various food recipes, including ice cream.
While homemade ice creams are always considered healthier as compared to store-bought ones; ice creams made of almond milk (instead of regular milk) are also ideal for those with lactose intolerance. You can also avoid eggs and sugar in almond ice cream, and replace them with other alternatives.

Recipe I

Ingredients
  • Almond milk - 2.5 cups
  • Egg yolks - 8
  • Sugar - 1.25 cups
  • Vanilla extract - 2 tsp.
  • Heavy cream - 1.5 cups
How to Prepare
Pour almond milk and heavy cream into a sauce pan, and place it over medium heat. Once the mixture boils, cook at low temperature for a few minutes, and remove from heat. In another bowl, beat the egg yolks; and when it is half done, add sugar and whisk thoroughly.
Once done, slowly add the almond milk-cream mixture to the egg-sugar mixture in small amounts. Make sure to stir constantly, so that the eggs do not get cooked in the hot milk. Once the whole milk is added, transfer the contents of the bowl to the sauce pan.
Once again, place the pan over medium heat, and cook till the contents reach a temperature of 175° F. Remove from heat and place the saucepan in an icebox, to cool the contents as soon as possible. Add the vanilla extract and allow the mixture to cool below 40° F.
If you have an almond milk ice cream maker, you can use it to churn this mixture. Otherwise, use the ice cream mixing bowl of the mixer, and run it for at least 30 minutes. Once done, freeze this mixture before serving, so that it gets the consistency of regular ice cream.

Recipe II

Ingredients
  • Almond milk - 2 cups
  • Sugar - ¾ cup
  • Cubed peach - 2 cups
  • Cornstarch - 1 tbsp.
  • Gelatin - 2 tsp.
  • Water - 1 tbsp.
  • Vanilla extract - 1 tsp.
How to Prepare
Take a pan and add the sugar and cubed peaches. Cook them till the peach cubes turn soft and juicy. Once done, puree the contents and strain through a fine mesh strainer. Add the peach mixture to the almond milk kept in a pot, and cook them over low heat.
Mix cornstarch in a tablespoon of water, and combine it with the almond milk and peach puree. Cook the contents over low heat for a few minutes. Meanwhile, mix gelatin in a tablespoon of water and keep aside.
Remove the pot from the heat, and slowly blend in the gelatin, till it dissolves fully. Add the vanilla essence and a pinch of salt; and mix well, before chilling the mixture for the next two hours. After two hours, you have to churn this mixture in an ice cream maker. Your almond milk ice cream is ready.

Recipe III

The following recipe requires two cups of almond milk (use unsweetened vanilla almond breeze), one cup of sugar substitute (your regular brand), ¼ cup raw cocoa powder, ½ teaspoon vanilla extract, and ¼ teaspoon xanthan gum.
In order to prepare this recipe, take half of the almond milk (one cup), sugar and cocoa in a pan, and mix well. Cook over medium heat, till the mixture boils. Remove from heat, and allow the contents to cool for a minute or two. Add the remaining almond milk and vanilla extract to the pan and pour the mixture to a blender.
Run the blender for a minute, before transferring the mixture into an ice cream maker. Churn the mixture in the ice cream maker for around 30 minutes. Once done, chill it and use.
